Marinade for grilled sea fish

Ingredients

* Soy sauce 50 ml.
* Lemon juice 15 ml.
* Bulb onions 1 PC. average
* Garlic 3 cloves
* Fennel 1 tsp
* Pepper of souls / mountains 1 tsp

Cooking method

  • Crush the fennel and pepper in a mortar.
  • Cut the onion into quarters, and coarsely grater the garlic.
  • Mix all ingredients.
  • Place the cut and chopped fish in the marinade (moisten well with the sauce). Marinate for 1 hour.
  • Before cooking, bread the pieces in flour and fry in vegetable oil.
  • IMPORTANT: if you are making a recipe for a marinade, then the spices should be chosen so as not to hamper the taste and aroma of the fish, but to emphasize and decorate them. So for sea and river fish, different spices are required. There is also a difference in the sets of herbs and spices for different types of food preparation.
  • This recipe contains garlic, BUT ... it does not manifest itself aggressively towards fish. Its aroma, here, is subtle and unobtrusive.

Note

Before, in order to fry fish, I made breading (flour, salt, pepper ..) And each time I had to try on my tongue if salt was normal. And I didn't like this procedure. Until one friend, who came from the Far East, said that they did not do that. They first marinate the fish with a certain marinade, and then all that remains is to brew it in flour and fry. I tried this option then and remained faithful to him forever)) The marinade can be composed to your taste. There are culinary tips on what spices to add to a particular dish. Adhering to them, you can create great recipes for such marinade sauces, absolutely for every taste.
To do this, I made myself signs in which it is written for what WHAT (from spices) to put. I must say that I had never been friends with spices before. Exactly until the day when my husband gave me a mortar. And then it began))
In general, it turned out that spices are mine))

The simplest "marinade" so that the fish does not fry in the pan is to hold the fish in water-salt-sugar in certain proportions. The salt and sugar in the marinade work together to enhance the flavor of the fish
This method of pickling fish was spied once by Lazerson, it works flawlessly Salmon trout (in sweet and salty marinade), fried or baked

This is for those who do not perceive soy or soy sauce for various indications - there are such disappointments

so that the fish does not fry in the pan
Tanya, Duc is not fried at me. Calmly departs as soon as a crust has formed. And I don't like adding sugar to this marinade. But for salting it I put it with pleasure. Yesterday I pickled mackerel (1 liter of water, 2.5 tbsp salt, 1.5 tbsp sugar, 1 tbsp wine vinegar, shower pepper, mountains, cloves, black pepper, laurel, coriander grain)

Thank you for Lazerson's idea. You never know))

Natasha, to your health! THANK YOU!

Lazerson's recipe for those who do not like spicy additives, but only the pure taste of fish. Or for those who do not accept soy products for taste or indications.And I want a fish

We definitely don't have such fish on sale. But for the sake of outlook, it's still interesting. It is necessary to read and ask WHAT FOR THE BEAST is this.

NatashaThank you for the fried fish marinade! I somehow got used to sprinkle it with Tasty garlic salt before frying. I add a little more sugar and fresh dill. I marinate for an hour and then fry it, roll it in flour. But now I will try it in your marinade with soy sauce and other spices. Thank you very much!
