Champagne from grapevine and leaves

Champagne from grapevine and leaves

Ingredients

the tips of the vine with leaves 1.5KG
Water 6 liters
Sugar 1.5KG

Cooking method

  • Many years ago, somewhere on the Internet, I found such a recipe for champagne, and since then it has taken root in our family and among friends. Easy to prepare and drink, cost-effective in terms of preparation time and ingredients.
  • We cut off the tips of the vine (I combine the chasing of grapes and the preparation of this drink) together with young tender leaves (about 50-60 cm), young stepsons, cut them 15-20 cm each. Fill them with boiling water and leave them for 3 days in a cool dark place. You don't need to stir anything. After 3 days, squeeze the branches and drain all the liquid into a bottle, add 1.5 kg of sugar (you can add 1 kg, add the rest in a week). Put a medical glove on the neck of the bottle. If all of the sugar has been filled in, then the bottle is left alone for 24 days. Then we pour the resulting drink into bottles, seal tightly and leave the drink for another 2 weeks for final ripening.
  • Try it and you won't regret it! It turns out exactly "champagne" - depending on the ripening period with a light smoke or foam fountain when opening the bottle, the strength is about 9-10 degrees. It is drunk like grape juice.

MixElla, How interesting! That is, we take only green shoots of grapes, and not lignified ones?
MixElla
Ale, yes, young and just beginning to woody shoots.
Elya_lug
MixElla, thank you, so you can do it now, stepchildren are still spinning at the blue wine grapes.
MixElla
ale, the closer to autumn the shoots are cut for this drink, the more noble taste of the final product. If from the first harvesting of shoots (we have it in the second half of June) champagne tastes like grape juice, then the early autumn drink takes on the taste of a very good wine (it tastes better than many table wines). Whoever tries it for the first time does not believe that it is prepared, one might say, from compost raw materials 😀
Elya_lug
Eleanor, thanks, I have to try, really surprising! Is fermentation warm or leave in the same cool place?
MixElla
Elya, I leave the bottle on the street, now it is still warm and I determine the end of fermentation by the change in color in the bottle, the absence of bubbles. In the photo on the right there is a bottle in which fermentation is taking place, on the left - the drink is ready for bottling, stood for 26 days under a glove

Eleanor, understandably. I don't see the photo. Maybe the link from the gallery is not copied correctly?
MixElla
Elya, Apparently I'm doing something wrong, it doesn't work otherwise

Thank you all very much for your help! This is my first recipe on the forum, I hope by the second I will learn how to correctly draw up recipes 😊
filirina
Eleanor, thanks for the interesting and unconventional way to use grape leaves! I will definitely try! If anything comes out more sensible, I'll come with a report! Or in tea, or in dolma, or in compost! Maybe we'll get some champagne!
Fifanya
Thank you very much for the recipe, somewhere I have already seen this. I wanted to repeat, but I didn't find that recipe, now I'll try yours

What bottles should you pour?

for 3 days in a cool, dark place.
Is it possible in the refrigerator at +5? And then the heat is at home.

MixElla, Eleanor, I am very interested in champagne containers. Acquaintances poured apple cider into 1.5 plastic containers. Exploded sometimes.
Rusalca
What an interesting recipe! Bookmarked it.
Eleanor, Thank you!
MixElla
For long-term storage, I pour it into liter bottles for wine with a sealed cork on a wire, for autumn consumption in liter or 1.5 liter plastic bottles, screw the corks tightly. When opening the bottles, do not shake, do not shake, do not keep in the sun, otherwise the fountain cannot be held.
I store bottles in the basement (not very cold, so very warm in autumn). I don’t remember at least one bottle exploding in all the time. I store the cider there, but it ends up in the basement later, when the temperature is already around 12-14 degrees.

Elena, I can't say anything about the refrigerator - I've never done that, I keep it in the room myself, it's not very cool either. When it's really hot, I put buckets and tanks in a tub of cold water.

MixElla, Eleanor, good recipe .. take note ..

Eleanor, today I squeezed the leaves and poured the contents into a bottle, but it does not want to ferment in any way, maybe I am doing something wrong?
eta-007
Girls, while Eleanor is silent. An acquaintance was closing in champagne bottles. Somehow I adjusted the plugs and fixed them with a wire like a factory one. Says: "Otherwise you can't hold it" Maybe someone tried to seal differently. And then, because of these dances with tambourines, I didn't want to do it, but the recipe is so tempting ..... You need to try.

In this state, it has been standing since Sunday, the house is warm. The glove no longer inflates. What's wrong?
Rusalca
Elena, why do you think that something is wrong? The glove is inflated, isn't it? Now, if she was blown away, and so it seems to me everything is fine.
Silyavka
Anna, I just look at other photos, there are such puffs, and mine is so stunted, so I thought ...
Rusalca
Flax, well, if the bottle is 20 liters, then the glove will inflate more. And you have a small 5 liter bottle. It seems to me that everything is fine. IMHO.
But let's wait for the author.
Silyavka
Yes Anyut, boom wait

Len, I tasted champagne today ...
Very tasty and deceiving ...
It is easy to drink and it seems that the degree is not felt ...
But then he literally knocks down ...
For my taste, sugar is too much, next year I will put less.
Definitely have to do!
How will the lighting be better, I'll take a picture in a glass.
Silyavka
Elena, but I didn't succeed. I had to pour everything out. I'm not friends with alcohol.

What a pity, Len ...
Silyavka
alba et atra, yes, Lena, very sorry. I wanted to try it, but alas. When I first started cooking, everything was fine. And then it became not hot at home, and the fermentation process began to come to naught, as a result, an incomprehensible cloudy substance with a pungent mash smell and the taste of living alcohol was obtained.

Flax, it was necessary to pour it into a bowl with a wide neck and at least make vinegar
The vinegar from the grape leaves is very good!

Delicious champagne turned out. Unusual slightly tart taste. The first trial was in November. Numbers 13-15. And now on January 2. January is already much tastier. She treated the guests. And only by a logical way, they, knowing what was growing in my country house, figured out that it might be. grapes. But of course they did not guess that these were leaves and vines. Struck down on the spot.

Eleanor, thanks for the interesting recipe, I'll try to make champagne in the summer!

Yes, delicious and sparkling!
Sasha, what is your aftertaste?
For some reason I have an apple ...

Not apple at all. More like a piece of wood. Malic acid is not even close. (It's just that my apple cider tastes sour, although the apples were sweet)
