  • And I wanted to make such a spice myself, since I already have experience in drying tomatoes, and I have already made friends with homemade spicy salt, I know approximately what should eventually turn out, for the best taste.
  • There are no identification marks on the packaging of the spice, what and how much is included. I had to go to the Internet in order to find at least some information, at least approximately, so that there was something to push off from.
  • Found ...)))) I sat down, I thought, reworked it taking into account my experience ... let's go ...))))
  • I went the route of not mixing dry ingredients completely and then grind them. With this method, the salt will not combine with the tomatoes, will not saturate them, as, for example, it was done in my other experiments with salt, where a delicious single ensemble was obtained.
  • I will dry tomatoes along with salt and garlic!
  • We take ripe red and dense inside tomatoes "cream fingers", of different sizes. Tomatoes need a dense pulp so that less juice is produced when dried.

  • We clean, wash and grate the "burner" on the large side. We put them in a deep bowl.
  • Peel the garlic, grate on a fine grater. Combine with tomatoes.
  • Add coarse rock salt to the tomatoes. Stir the whole mass, combine carefully the tomatoes, salt, grated garlic. Let the mixture stand for about 10-15 minutes to separate the excess juice.
  • Arrange the tomato slices on the trays of the dryer, and bring them to readiness, dry condition. I have dried tomatoes on a high temperature. If you leave them to dry even at night, then you can reduce the temperature to 35-50 * C, in a quiet mode. But then, anyway, finish drying the tomatoes on a high temperature.
  • Put the finished tomatoes in a bowl, weigh them. I got it with 2 kilograms of fresh tomatoes, only 210 grams of dried ones !!! The bunch is big, but the weight is small !!!
  • Now I break the dried tomatoes in parts in a coffee grinder-blender (whatever you like) to coarse crumbs.
  • And I combine tomato chips with dried basil. Basil I use only green, I like it in taste and smell. And I also harvest the basil myself, dry it with whole leaves

  • At this stage, the spice "dried tomatoes with garlic and basil" is ready!

  • In this form, I will store the spice and add it to dishes and to baking bread, where a large aromatic mixture is needed, but in the form of a large crumb.
  • For use in other dishes, in salads, for sprinkling with eggs, potatoes and so on ... I will prepare a ground version of the spice.
  • To do this, I will grind coarse crumbs to a powder, and will store them in a small jar, always at hand on the table, with other similar spices.
