Olivier salad without potatoes on sour cream mayonnaise with mashed boiled yolks

Ingredients

Barrel cucumbers small (salted) 2 pcs.
Eggs 3 pcs.
Medium soaked apple (fresh sweet and sour) 1 piece (0.5 piece)
Fresh cucumber without skin small (optional) 1 PC.
Brain pea varieties 3-5 tbsp. l.
Medium boiled carrots 0.5 pcs.
Boiled beef (boiled tongue, turkey or chicken fillet) 50 g
Boiled celery root (ideally) 100 g
Pickled mushrooms (optional)
Capers 1-2 tbsp. l.
Dill for decoration
Sour cream mayonnaise with mashed boiled yolk:
Sour cream 20% 100 g
Lemon juice 1-2 tsp
Salt 1/3 tsp
Sugar 0.5 tsp
Ready-made mustard (I have my own with walnuts) 0.5 -1 tsp
Boiled yolk 0.5 pcs.

Cooking method

  • Everything is as usual with us!
  • Wanted homemade salad "Olivier" for dinner, but there is no boiled potatoes. Mayonnaise was also not observed. I remembered the recipe from T. Tolstoy, which I didn't really like. I decided to pile up my own, so I share.
  • We found soaked apples in a vacuum bag, which it was high time to start using them ... They will go for lack of good sweet and sour! And our cucumbers are notable, our own, according to grandmother's recipe, like salted barrels. There wasn't even boiled celery today. It's okay - just the portions turned out to be "restaurant" type. And there is no need to overeat at night! )
  • Once I had to get out in the absence of mayonnaise and the inability to buy it, so I have been doing this for a long time. It is a variation of the favorite dressing for spring lettuce. But I add mustard and mashed boiled yolk there. The taste is very close to mayonnaise.
  • The number of ingredients is very arbitrary, since I have not yet seen a single person who would weigh carrots, potatoes or eggs into this salad, so here is an approximate calculation. The more you love in taste, the more you put.
  • Capers are a great decoration for beef salad, and soaked apples are especially combined with boiled tongue.
  • I also added mushrooms somehow, it's not for everybody! And they should be plump, finely chopped to the size of peas. Ideally, use dense pickled white mushrooms.
  • Making mayonnaise
  • We take the boiled yolk and grind with sour cream, add salt and sugar to taste, mix very well until the yolk is completely combined with sour cream. You don't need to use a lot of yolk, otherwise it will prevail in taste and be felt on the tongue.
  • Then we begin to gradually add lemon juice and taste it. As soon as we have caught "our" taste, add ready-made mustard, we also use it to taste. We keep the mayonnaise in the refrigerator until serving.
  • Here's a "mayonnaise" turned out:

  • Making a salad
  • Everything as usual. We cut into cubes the size of peas or a little more, and start cutting with the wettest ingredients. We put them on the bottom of the bowl. Separate the juice with salt.
  • Cut off the coarse skin from pickled and fresh cucumbers. Squeeze the chopped pickled cucumbers a little from the moisture so that the salad does not drip immediately. In this case, this is important, because we use sour cream, there is no thickener in it.
  • Boiled carrots, or better baked in foil, peel and cut into cubes. Cut the rest of the ingredients into cubes. (Today I used carrots from broth - sinful, of course! But they asked for a salad very much)
  • We also dry the meat slightly and cut it. Cut the eggs, the protein remaining from the preparation of mayonnaise and part of the yolk into cubes.We put everything in a bowl in layers and mix just before serving.
  • We fill each of them with our home-grown mayonnaise, this item is a must!
  • Bon Appetit!

Olenka, thank you for believing in me! We will definitely do it! I learned how to make pickled apples. The most interesting thing is that they were in my basement under nylon lids in 3-liter cans for three whole years. And they remained as tasty as in the first year. Not even mold appeared.
