Pear and coffee jam

Ingredients

Pear (net weight) 1 kg
Sugar 250 g
Green cardamom beans 10 boxes
Coffee beans 1 st. l.

Cooking method

  • Peel and seed pears. Cut the pulp and put in a saucepan, in which you will cook in the future.
  • Remove the cardamom seeds from the capsules. Crush in a mortar or grind in a coffee grinder, sift into pears through a fine sieve.
  • Pour in sugar, stir.
  • Cover and refrigerate for 12 hours.
  • After a while, put the pan on the fire, bring to a boil, remove the pears with a slotted spoon and boil the syrup for 3 minutes with the lid open. Then return the pears and cook for 5 minutes with the lid open, skimming off the foam.
  • Remove the pan from heat, close the lid and leave to cool for 2-3 hours. The time is conditional. You can do more, proceed to the next stage when you are free.
  • After cooling completely, remove the pears, put the pan on the fire and cook the syrup for 3 minutes. Then return the pears and cook for another 5 minutes. Remove the pan from heat, close the lid and leave to cool for 2-3 hours.
  • Repeat the last step one more time.
  • At the very end of brewing, add coffee (I have my own Kenyan roast), stir, remove from heat. spread over a sterilized jar, roll up, turn upside down and cool.
  • Leave for a month to infuse. yyy))))

It turned out not just tasty, but obscenely tasty !!!!))) Of course, you can't treat food like that, but I can't help myself, it's just an unreal taste. All day I go and savor it on a spoon. What is there - "let it brew for a month."))) I did it twice and put all the jars in the far drawer. I will issue only on holidays !!!!!!!

Note

In the original recipe, instead of cardamom, it was 1/2 hour. l. ground cinnamon and 1/2 tsp. l. ground cloves.

At the end of the jam making process, I suspected that I was definitely deceived in the market by selling some tiny kg of pears. Therefore, I have already poured coffee at the rate of half a portion. I suspect that anything will be insisted for a month, even a jar with a lid, but there will be no jam in it. It's a pity that our pears are very expensive, but they don't grow in my country house. I will look for barter: I will have raspberries or apples in exchange for pears.
