How to replace butter and vegetable oil in baked goods

BUTTER

In recipes sweet dishes you can substitute ¾ cup butter for applesauce. Otherwise, use vegan oil substitutes. For recipes that require a little oil, use a vegan substitute.

When baked, it adds a creamy flavor and sometimes gives the dough a porous structure; the butter also helps the dough rise evenly, making it thicker and sweeter.

For strict vegetarians, replacing butter is as easy as shelling pears: for example, vegetable margarine (read the composition). Alternatively, you can use unrefined coconut oil (it will be hard at room temperature), which will give the dough the same firmness as butter.

Canola oil can be used in recipes with sugar syrups or hard fats (for example, combined with ground nuts or chocolate in cakes). You can also find vegan baking powder.

Margarine is an excellent substitute for butter, take the same amount as butter.

Fruit puree, one of the most interesting and suitable for everyone, butter and margarine substitutes. The following fruits are suitable for this: apple, bananas, prunes. Bananas are great for baking bread and buns... Fruit puree should be taken in the same amount as we would have taken butter. For this, mashed potatoes in baby food jars are perfect. You can easily make mashed potatoes yourself.
Only fruits with a strong aroma are best avoided.

Substitute low fat cottage cheese for butter. Low-fat cottage cheese contains calcium - a trace element that is directly involved in the formation of human bone tissue.

These butter substitutes are great for baking:
• Any vegetable oil (1 cup or 200 grams of butter = 2/3 cup vegetable oil);
• Margarine based on soy milk (100 grams of butter = 100 grams of margarine);
• Fruit puree made from banana, prunes or apples (100 grams of butter = 100 grams of puree). You can buy ready-made baby purees in jars, or you can cook them yourself;
• Cornstarch mixed with water in proportions 1: 2. Mix the ingredients, heat them up in a microwave or water bath and let cool completely;
• Yogurt. It can be mixed with margarine or soybean oil (200 grams of butter = 0.5 cups margarine + ¼ cup yogurt);
• Mayonnaise (100 grams of butter = 100 grams of mayonnaise);
• Vegetable puree made from sweet potatoes, squash or pumpkin (100 grams of oil = 100 grams of puree).

Unsalted cow butter can be replaced with butter in the following ratio:
• melted - 1: 0.85 kg,
• peasant - 1: 1.14 kg,
• table dairy margarine — 1: 1 kg (only for products whose recipe includes no more than 5% fat).
Oil intended for the preparation of cream or products for children, as well as those for which animal oil is provided in the standard, cannot be replaced with margarine. With such a replacement, for each kg of condensed milk with sugar, it is necessary to reduce the amount of sugar for kneading the dough by 0.17 kg.

Margarine is replaced
• anhydrous liquid or cooking oil (1: 0.83),
• liquid margarine (1: 1)
• vegetable oil (1: 0.85), the last change is allowed for products containing no more than 5% fat according to the recipe. If the recipe requires more than 5% fat, then 50% margarine can be replaced in this way.
You can not replace butter with margarine in products intended for baby or diet food.

How to replace butter for allergies?
• Some manufacturers produce dairy products based on goat or sheep milk. Its prices are much higher than for "cow's milk", but the risk of developing an allergic reaction is practically absent.
• If you have free time, you can buy fresh goat or sheep milk and beat the butter at home.
• When frying, use corn oil, olive oil, sunflower oil and pork fat.
VEGETABLE OIL

Vegetable oil is of little use when cooked - in fact, it dies. Oil changes biochemically when heated and loses many of its nutritional properties. Better enjoy the extra class unrefined oil. The healthiest unrefined oils are olive, grape seed, avocado, walnut, sesame, flaxseed, and peanut. Use coconut oil when cooking, it has a high boiling point and will withstand heat.

How to replace vegetable oil
• Not satisfied with the taste of vegetable oil - try olive oil or other vegetable oil. Many people are very fond of sunflower oil with a smell - unrefined. Here it must be remembered that you cannot fry in such oil, since it produces carcinogens during frying. But to fill salads with them - to your health! Such salads are not only healthy, but also tastier.
• Vegetable oil does not prevent burning - in this case, it is advisable to buy a special oil spray for frying, which you need to drip into the pan quite a bit, or also change the oil to olive oil.

• The same applies to cosmetic procedures. Do not use olive oil for massage and do not use cosmetics that contain it.

coconut oil is also 1: 1?

In the sense of? What exactly?
rodnik
Tatyana, oh: oops: ask) If you replace creamy with coconut 1: 1 too? Their structure is completely different. My coconut is almost always in a solid state, it's not in the refrigerator.
Admin

Olya, I don’t know anything about coconut oil and I don’t use it
But judging by the way it is used in the culinary program, there the replacement goes almost 1 to 1, and it is used a lot and often. They refer to it as a dietary product, but this is in Australia.

Tatyana, Thank you! I'll try on a cupcake) The calorie content is only higher than that of a creamy one, by as much as 150 units :) Does it make sense to replace))))
Admin

Then I see no point in replacing, if talking about calorie content Or reduce the amount of butter, and bring in a %% ratio under butter

For a biscuit (Cake), can I replace creamy with melted?
60g butter = 51g melted
In order not to melt the creamy. Ghee is almost liquid, perhaps slightly heated.
Actually, the question is: will the biscuit work? Are there hidden limits?
Admin

It's better to go to the confectioners with this question, I practically don't bake
And according to my observations, the biscuit dough will turn out easier with butter.

Found the answer in the internet
The biscuit tastes best with butter!
Admin
Because butter is lighter than ghee, it contains about 12-15% whey.
In ghee, complete substitution, and the butter contains only almost 100% animal fat
