Berry shortbread baskets with butter custard

Ingredients

Butter 180 g
Flour 2.5 tbsp. (400 g)
Eggs 1 egg and 1 yolk
Sour cream 1 tbsp. l
Sugar 2 tbsp. l riding
Salt pinch
Soda + lemon juice 0.5 tsp + 0.5 tsp
For the cream: 250 ml milk, 80 g sugar, 2 yolks, 25 g flour
Cream 33-38% and cream fixer 100 ml

Cooking method

  • The berry season has arrived, and this gives us all the opportunity to enjoy wonderful desserts and cakes with fresh berries and fruits. I suggest preparing crumbly sand tartlets (baskets) with custard and any seasonal berries.
  • The purchase of good tartlet molds coincided with the ripening of strawberries and strawberries. I wanted to make custard baskets with whipped cream.
  • Strawberries with cream, which have long been a culinary classic and a win-win for any table, are our favorite dessert too. And custard on yolks is very beneficial in taste in combination with whipped cream and goes well with crumbly, not very sweet tartlet dough.
  • Such a dough can be made in advance and kept in the refrigerator, baking baskets as needed. Shortbread dough, as you know, keeps well frozen.
  • - First, you need to beat the butter until a fluffy whitish mass, then add an egg, yolk and one tablespoon of sour cream (mayonnaise - for some reason, tastier with it) and beat the mixture again. It's easier to do this in a food processor.
  • - Quench the baking soda with lemon juice or wine vinegar and pour into the mixture.
  • -Mix all loose products and combine them with the prepared mixture quickly, without too much zeal, knead a soft plastic dough and send it to the refrigerator for 30 minutes to ripen.
  • - Form the same balls from the prepared dough and place the dough on the baking dish. For my molds, 60-65 grams are required. dough for 12 cakes. (My forms do not require oiling, so this is up to you.)
  • - Chop the dough well with a fork and bake at 180 gr. to a pleasant golden color. Let the baskets cool before removing them from the molds. The dough is fragile enough !!
  • Cream preparation.
  • - Mix 50 ml of milk well with two yolks, a spoonful of flour and a spoonful of cornstarch. Heat 200 ml of milk with sugar to a boil, reduce heat and pour in the mixture prepared earlier in a thin stream, stirring continuously with a whisk.
  • - Continuing stirring, cook the mixture until thickened (until the first signs of a boil appear). Add vanilla extract if desired. Remove from heat, cover with plastic wrap and leave to cool completely.
  • I advise you to have a saucepan with a non-stick coating and a special whisk with a silicone coating for cooking sauces and creams, so as not to scratch the bottom and sides.
  • - Beat 100 ml of chilled whipping cream (33-38%) with a thickener (without it) until soft waves and gently mix with the cooled custard.
  • - Put the cream in the tartlets and garnish with berries on top. The berries must be washed in advance and dried well.
  • Berry shortbread baskets with butter custard Berry shortbread baskets with butter custard Berry shortbread baskets with butter custard
  • Berry shortbread baskets with butter custard Berry shortbread baskets with butter custard
  • - Optionally, you can decorate the tartlets with powdered sugar (non-melting) and a mint leaf.
  • Enjoy your summer tea party!;)

The dish is designed for

12 pcs.

Note

For speed, if you don't want to bother whipping cream, you can add a little butter to the lukewarm custard instead and beat.
It turns out quite well with cream with condensed milk and cream.

What wonderful little baskets! In childhood, it was such a delicacy, and then for some reason they forgot about them ...
Rada-dms
barbariscka, so I looked that I had forgotten, and decided to offer my own version
ang-kay
Rada-dms, Wonderful little baskets! I don't bake anything like that until the fast is over. But I will. I have long wanted to bake baskets, but somehow it didn't work out. But we must try. Thanks for the recipe. I drag them into the bins.
irysikf
What beautiful baskets Dachshunds, I bought a large form for a jellied pie, but there are no baskets for the baskets - they need to be corrected (although I looked out for them, but have not seen them anywhere yet).
Rada-dms
barbariscka, ang-kay, irysikf, Thanks for attention ! I also didn't bake for a hundred years, then I tried to make a dough so that it was not very fat and sweet, but crumbly, it seemed to work;) Now I make a pie with it too.
Even just with condensed milk and that's good!
natali3279
Rada, did you put the dough in the molds on the bottom, or did you turn the molds upside down and turn the dough on them? I may not express myself clearly, sorry
Rada-dms
natali3279, I tried to show it in the photo, but the photos with the help of the tablet turned out to be unimportant. These forms have a curved bottom too. You put it, as in ordinary molds, leave a place for lifting, as in the photo, then turn it over after baking, the bottom that was the top turns out to be flat, and the new top has a small depression. These molds are still good for sponge dough.
natali3279
thanks, understood
celfh
Very nice and tasty!)))

but so far there is not enough time for anything

Loksa
Rada-dms, and where can you buy such baby forms? Cool cupcakes you have !!!
Irina.
My God, what a beauty !!!
Rada-dms
Loksa, I bought in the Metro store, there are six pieces in a package :)
Rada-dms
Irina., thanks for seeing the little baskets !!!

Rada-dms, for those who are in the tank: I still do not understand where the cream is (the cutter would have to look) .. I realized that it is not where the body is pierced with a fork, but what is the right way?
and more about fragility ... do they remain fragile when finished, or soften a little from the filling?
Rada-dms
Vinokurova, in these molds you can bake traditional baskets for us, that is, with a large depression and so-called jellied cakes, when the dough expands to the bottom, and the top is not very deep. Only in the traditional will the bottom be slightly concave. Both options are beautiful. I made the second option. That is, the bottom was the place that was pierced with a fork.
I would not say that it was from the proposed filling that they softened a lot. But the baskets are not oak, but crumbly, at the same time they do not crumble from the slightest touch when you make the dough on clean yolks.
As I bake it again, I'll show you a cut, but what's there to see, it's not a cake. As soon as I photographed them, I ate them, because I bake and, as needed, stuff them, and eat them right away.
The forms are very interesting, I advise you to buy them, and there are also some for large berry pies. They also put berries in the same macar as me and pour jelly.

Rada-dmsit seems that I have just such molds ... if you bake (if not difficult) I will be very grateful to you ...
I tried to make tartlet baskets on NG ... it was cool to put fish, shrimp and crab salad and some caviar in them ... it was delicious, of course, but I didn't like the dough itself ... the baskets were not so hot ... yes, I was still worried while baking ... then I poured dry peas, then baked ... in general, I lost the desire to repeat ... but I look at your baskets and I am glad - well, such paws !. Now I’ll definitely try ... I must have dried them out?
thanks for giving us a simple recipe!
Rada-dms
Vinokurova, I don't sprinkle any gorokh, I just distribute and prick very tightly to the edges! And you can just make it out of puff pastry, I had a recipe with cherries and cottage cheese for the competition, and recently, look, there, like volovanov, it was made from ready-made dough, just right for shrimp. Later I will give links if you don’t find it and are interested!
Vinokurova
Rada-dms, it's better to see YOU ... where to look about the competition baskets ... and they will calmly come out if you press the dough tightly ?. Well, I haven't seen this before?
thanks for the help..
Rada-dms
Vinokurova, now, it's better to look in my profile!

Olyushka I have a thank you and a photo report. Today I baked baskets. I made the dough according to your recipe. I liked both the preparation and the taste of the dough. Thank you very much. Due to seasonality, I used frozen berries. The cream was made by butter + condensed milk (at the request of the congratulated person). Mikhaskovskaya Nutella was specially prepared for the bottom of the baskets. What do you think was delicious? Berry shortbread baskets with butter custard My molds are small - that's their beauty - 22 things came out. Oh, my congratulations are full ...
Rada-dms

Easy in two days!
Rada-dms
Vinokurova, yes, with notifications quite a pipe, if not for Irishkin's question, I would have missed the message! Everyone is already waiting for the summer! For some reason I can't wait for apricots! And cherries!
Tumanchik
How to store it?
Rada-dms

Mist! What beauties I almost missed! Probably tiny? So pretty!
Mikhaska
Shit! Shame on me! The owner of the recipe didn’t thank her for the beauty - delicious food!
Olenka! Well, how do you get the baskets out of these molds? Do you lubricate them with something? I have, imagine, too! But, for some reason, they seem thin to me. All I think is that baking will be welded to them ...
And, you have, I see, everything is wonderfully baked in them!

Irisha! So far, I baked only a rather fat shortbread dough in them, once greased it before using it for the first time and then wiped it off with a napkin after baking.I think if the dough is closer to muffin, then you need to grease them. Try not to lubricate one and see!

Turn the metal muffin dish upside down and put the circles of dough on top of the bottom. During the baking process, it flows around and takes on a "basket" shape.
What did you write this for?
Valerka
Rada-dms,
I mean that people sometimes, to keep the shape of the basket, fall asleep there beans, prick with forks. But this contagion dough still strives to slide to the bottom! In this case, there is a risk that on the one hand, if you missed the center, it will slide to one side. But usually the sugar-butter dough slides more evenly.

I mean that everyone immediately ran to make these baskets.

but if you don't like it, I will delete this post. The conflict will be settled, OK?
Rada-dms
Valerka, and where did you see the conflict here?
Simply, if you carefully look at the recipe and in the photo, you will see that it is these concrete molds that have a concavity in any position - that is, you can bake blanks for jellied baskets-mini-pies and classic ones if you turn them over to the other side.
So your advice is good, but it works for simple flat-bottomed molds!
Valerka
Rada-dms, well, I will delete my post, for the reason that your baskets should be baked in exactly the same form as yours. And there is no conflict.
Rada-dms
Valerka, oh, I don't see any conflict, I don't even want to see such a word in the subject!
Just a discussion, so everything is OK! But it's better to read the recipes before commenting! Aha! I myself sin by haste.
I just thought right away that you were wrong with the topic ...
Marusya
Olya, the baskets are just wonderful, and only their contents! I need to bake, I have the same molds
