Ingredients

Minced lamb 500 BC
Beef 500 BC
Dumba (fat tail) 50 g
Zira (coarsely ground) 1 tsp
Ground coriander 0.5 tsp
Salt 17 g
Sugar 1 tsp
Water 100 ml.
Pepper mixture (I have 4 types) 1/3 teaspoon
Gelatin 1 tsp
Dried apricots 50 g
Prunes 50 g

Cooking method

  • Lamb lovers will love this roll. I'm sure!
  • Moroccan lamb is one of the favorite dishes in our family. Therefore, not having played enough with a ham, I decided to adapt this recipe to it.
  • So, cut the beef into 2x2cm cubes. Dumbu - the same, it can be a little smaller.
  • Then we put all the ingredients, except for dried apricots and prunes, into the mixer bowl

  • and using just such a nozzle, we knead our minced meat for 10 minutes.

  • After kneading on the minced meat, such small veins-strings should appear, this is a guarantee that the finished "ham" will keep its shape well.
  • Now add dried apricots and prunes to the minced meat, cut into 1x1cm cubes (they do not need to be soaked beforehand).

  • Allow the whole matter to mix for another minute and transfer, tamping tightly with a spatula, into a ham flask.

  • Now we close the lid, press the red pimp on top several times and put it either in the refrigerator, or like me, leave it on the table (but not overnight, of course).

  • We take a saucepan with a height of about 14-15 cm. Place the ham maker in it and pour cold water so that it does not reach the pink edge by about 1 cm.

  • At the end of the cooking time, we put our ham to cool in cold water. There should be as much water as it was during cooking so that it does not get inside the ham. After 40-50 minutes, remove the ham from the water, turn it over and drain the excess juice formed inside through the holes in the lid. That's it, you can put the ham in the refrigerator for several hours until the roll cools completely, preferably at night.
  • Advice: if suddenly your roll gets stuck inside the flask, then do not pull too much, there is simply a vacuum created. With the sharp end of the thermometer, sand it lightly between the meat and the wall, it will quietly chomp and you can slowly pull it out. The flask remains generally clean, nothing stuck, only greasy and that's it.
  • Now our roll can be easily cut with a knife or slicer. It doesn't break or fall apart.

  • Summary: it turned out deliciously outrageous! I didn't even expect such an amazing result! The roll turned out to be quite low-fat, as one would expect, and I am glad that I listened to my husband and added a dumba. She, oddly enough, did not freeze into stone, but behaved almost like lard. Which undoubtedly had a favorable effect on the taste.
  • What else is good about this roll: and the fact that it can be eaten hot! It turns out soooo delicious! True, you need to cut it cold, and only then reheat it right on the dish. On top of the couscous, I put a spoonful of ham-juice jelly. It melted right before our eyes, soaking the couscous.
