Cooking method

  • I was always interested in the cuisine of other countries, but mostly I tried to bake only baked goods. When I saw the recipe for German pies, I realized that I urgently needed to bake it and it was right)))). The dough with cheese is very tasty in itself, the filling - minced meat fried with cabbage with a spicy note is also very good, but everything baked together in the form of triangular ruddy pies is a real gastronomic feast). Now I boldly cook the filling as a second course, and I'll try to bake buns from the dough, I think they will also be appreciated))).
  • For the dough, grate the cheese on a fine grater. Dissolve yeast and sugar in warm water, let stand for 10 minutes. Sift 1 cup of flour (of the total) with salt into a bowl, add the yeast mixture and mix thoroughly. Gradually add the remaining flour (sifted) and grated cheese, adding warm milk. You should have a soft, tender, elastic and not sticky dough. Place the dough in a clean bowl, cover with plastic wrap and leave to rise for 1.5 hours. (I did kneading and proving the dough in KhP, it took less than 50 grams of flour, from the amount declared in the recipe, maybe the flour is too wet, or maybe manual kneading affects the dough differently - I don't know).
  • For the filling, chop the cabbage very thinly. Cut a too long salt shaker into 2-3 pieces. Peel and finely chop the onion and garlic.
  • Rotate the meat through a meat grinder. (I replaced the beef with chicken breast). Melt the butter in a large skillet, add the minced meat and sauté over high heat, breaking the lumps with a fork until the minced meat is brown. Add onion, garlic, cabbage, a little water to the pan, pepper, salt and stir. Close the lid and cook over low heat until the cabbage is tender, about 10-15 minutes.
  • Divide the matched dough into 2 equal parts, roll each into a circle with a diameter of 30 cm. Cut both circles into 6 sectors.
  • Place the filling in the center of each, lift the 3 corners and pinch them and the edges.
  • Place the patties on the paper-lined baking sheets and set aside for 30 minutes. Then brush with beaten egg and bake for 30 minutes at 170 g. (in a preheated oven).
  • Serve hot or chilled.
