Merchant-style rabbit fricassee

Ingredients

rabbit 1-1.2 kg
carrots (medium) 1 PC
onion (medium) 2 pcs
garlic 3-4 cloves
ground paprika 1 tsp
mixture of four peppers (ground) 0.5 h l
salt taste
cognac 50 ml
cream 33% fat 150-200 ml
olive oil and butter for frying
flour for breading

Cooking method

  • 1. Cut the rabbit into small portions, roll in flour and fry in a mixture of oils until golden brown.
  • 2. Put the carrots cut into circles on the bottom of a deep saucepan and place the fried rabbit pieces tightly. Pour in a little broth or just boiling water, cover and simmer over low heat until desired softness. Add broth or water if necessary. You can also simmer in the oven at 170-180C.
  • 3. While the rabbit is stewing, cut the onion into very small cubes, cut the garlic into thin slices. Put everything together in a frying pan and fry in a mixture of oils until transparent. Add paprika, pepper, lightly salt, pour in brandy. Increase heat and, stirring occasionally, allow excess liquid to evaporate. Then remove from heat and set aside for a while.
  • 4. About five minutes before readiness, add onion to the meat, salt, pour in cream, bring to a boil and heat everything together for a couple of minutes. Serve with mashed potatoes or buckwheat porridge.
