Flip Pear Pie


Wheat flour 225g.
Cream 33% 80g.
Softened butter 100g.
Sugar 100g.
Salt pinch
Baking powder 1 \ 2h. l.
Sugar 100g.
Butter 80g.
Hard pears "Berra" 2 pcs.

Cooking method

Beat butter with sugar. Add all other ingredients. Knead a soft dough.

Put the dough on the table, collect in a ball:

Put in a bag and refrigerate for 1 hour.

For the filling, put the sugar in a bowl with a thick day. Heat over medium heat. Wait for the sugar to melt. I deliberately wanted the brown color and the "burnt sugar" taste. When all the sugar has dissolved, add butter and boil until caramel is formed. Pour into a silicone mold, d24cm.

Top with peeled and chopped pears.

Roll out the dough into a circle and place on top of the pears. Press down with your hands.

Bake in an oven preheated to 220C until golden brown for about 30 minutes. The exact time depends on your oven.
