Cupcake with dried cherries

Ingredients

Eggs 3 pcs
Sugar 175 g
Butter 180 g
Juice and zest of 1 lemon
Milk 2 tbsp. l.
Flour 225 g
Baking powder 1/2 tsp
Cherry jerky 160 g
Cognac 3-4 tbsp. l.
Candied fruit handful

Cooking method

  • Soak cherries in cognac.
  • Beat eggs with sugar. Gradually add softened butter, lemon juice and zest, milk. Beat everything until smooth. Mix the flour with baking powder and add to the egg-oil mixture. We knead. Lightly dry the cherries with a paper towel and roll in a little flour. Add to the dough.
  • We heat the oven to 170aboutC. Put the dough into a mold and sprinkle with candied fruits on top. We bake for about 1 hour. We determine the readiness with a splinter.
  • Put the cake on the wire rack and let cool completely. Sprinkle the top with icing sugar if desired.

The cake is unrealistically tasty, tender, not very sweet, with a subtle citrus aroma. I liked it very much! Two pieces crackled in one fell swoop! The only thing is, instead of cherries, I put cranberries, soaking them in orange liqueur overnight. And the cupcake cracked a little on top, I don't know what's wrong.
