In general, if anyone is interested, the shortcomings noticed during operation: imported canned food opens amazingly, our graph paper also opens, but we need to try a little. The kit includes a knife sharpening device, but it is better not to use it at all. They can sharpen a hatchet a couple of times and that's it. The abrasive is very coarse and the angle is wrong; good knives can only be spoiled. I will definitely post a photo in the near future.

Before using the device, familiarize yourself with its structure and operation rules.

For safety reasons, never immerse the device in water or other liquid. Only sharpen clean knives! Unplug the appliance before cleaning. Do not touch the moving parts of the device.

Introducing the 320 sharpener
Place the sharpener on a level surface.
Place the heel of the knife blade (heel) in the slot (sharpening compartment) of the machine 1. Relax your hand, you can feel the magnetic guide pull the knife into the slot and tilt it at the desired sharpening angle. Pull the knife towards you for 3 seconds. Keep the knife parallel to the work surface, unless you are sharpening the tip of the knife. Now you have a feel for how the magnet works and you can start sharpening in real life.

Instructions for the grinding machine No. 320
If you sharpen your knife for the first time on the Chef`s choice sharpener, you need to change the factory sharpening angle. For any knife, this is a one-time operation. It takes extra time, but after that it will be quite easy to sharpen the knife. This operation is called "Launching the knife".
Plug the power cord into a power outlet. Move the switch to the ON position.

Stage 1.

Hold the knife firmly but without tension. Insert the heel of the knife blade (heel) into the left slot (sharpening compartment) # 1 of the machine. This is the pre-sharpened slot (STEP 1). Let the knife tilt towards the left side of the slot. Pull the knife towards you, allowing the magnet to position the blade at a constant sharpening angle. Do not press on the blade.
Start sharpening from the heel of the blade to the tip and NEVER VISUAL.
After one feed in the left pre-sharpen slot, place the knife in the right slot. Also do one broach. Alternate between the broaches in the left and right slots. Make 15-20 broaches in each slot for 3 seconds (for a blade length of about 12-15 cm). For very dull or thick blades, more broaches may be needed. To sharpen the tip of the blade, lift the handle slightly, following the curve of the blade. After the normal broaches, do 2 quick broaches (about 1 second) in the left and right slot.
There is an easy way to determine when stage 1 sharpening is complete. Swipe your finger from the middle of the blade to the edge. You will feel a burr formed on the side that was sharpened last. This is a sign that sharpening is complete (see photos 4 and 5 on page 7 of the instruction). You can then proceed to Step 2. If the burr is not felt evenly along the entire length of the blade, do an additional 1 slow feed in Step 1.

Stage 2.

In slot 2, the knife is refined (polished) to achieve the ideal sharpness of the blade. Also extend the blade as in step 1, alternating between the left and right slots. Do 4-6 slow broaches in each slot, then 8-12 quick broaches. If you are not satisfied with the sharpening, add a few more broaches. If this is not enough, repeat sharpening in steps 1 and 2.

Sharpening knives with a serrated edge (file)

Saw blades can only be sharpened with fast feeds in Stages 1 and 2. The saw teeth are aligned and regrouped, and the saw tips are sharpened. Don't over-sharpen the serrated at Stage 1 !! If there is strong vibration, go directly to Step 2.

While the sharpener is new, diamond abrasives will tend to "grip" knives, especially small ones. Start by sharpening 3-4 large kitchen knives to reduce this feature of diamonds.

Grinding Machine Care

Do not use any lubricants to maintain the sharpener. It is enough to wipe the sharpener with a soft cloth. Do not use detergents or abrasives. To remove metal dust, pull the plate out from the bottom of the sharpener and shake it out. A similar procedure is required no more than 1 time in 18 months.

Well, I don't have Van Tach, but Tefal, but in my opinion, there is not much difference. Only that my batteries are not needed, powered by 220 watts. I won't say that this is such a basic necessity, but I like it. The jar turns into an open jar. The cap remains on the magnet on the opener, it does not fall into the jar.
