Dried pears

Ingredients

fresh pears (net weight after processing) 1 kg.
white sugar 400 gram

Cooking method

  • Ezidri Snackmaker FD500 electric dryer,
  • High mode (high) 60 ° C.
  • Wash, peel, and cut the pears in half. Chop each half in several places.
  • Dried pears
  • I use such a comb (it was supposed to be used for slicing onions), the teeth of the comb are sharp and well, they quickly prick fruit.
  • Dried pears
  • It is enough to make 3-4 pricks with a comb on each half of the pear.
  • Place pears in a saucepan, sprinkle with sugar, and leave to juice, about 30-36 hours. You get a lot of juice.
  • Transfer the pears to a sieve, let the juice drain from the pears.
  • Dried pears
  • Put a saucepan with pear juice on the fire, bring to a boil, boil for a couple of minutes, reduce the heat to a minimum, just to keep the syrup hot at a temperature of 90 * C.
  • Gently dip the pears in the hot syrup, dip them in the syrup with a spoon, and periodically dip them in the syrup and pour the hot syrup over the pears so that the pears are soaked in the hot syrup and become transparent. It's not long in time, it will take about 10 minutes.
  • I check the readiness of the pears like this: I put the pear on a spoon, squeeze the edges with my fingers to the middle, if the pear shrinks, gives in to compression, then it's time to take it out. The pear should be slightly soft and damp inside.
  • Dried pears
  • Put the finished pears on a sieve to allow the syrup to drain, and the pears have cooled down a little and have become slightly warm.
  • Dried pears
  • Dried pears
  • I transfer the cooled pears to the drier tray
  • Dried pears
  • I put it to dry. I turn on the High mode (high) 60 ° C.
  • Drying time depends on the pear variety, density and size. My pears dried for a long time, I took large pears. In total, it took about 13-15 hours, with a break for cooling. Cooling pears between dryers gives a good effect, pears cool down, absorb sugar, and then dried better for some time. During drying, the pallets are periodically changed in places, so they dry better, since this happens better on the upper floors.
  • I give the ready-made pears time to cool completely, do not immediately take them out of the dryer.
  • And here's the result!
  • Dried pears

Well, very tasty !!!! Dried pears

PEARS - the fruits of the tree of the same name up to 30 m high with whole-edged, crenate or serrate, but with small and obtuse teeth, leaves and white, with a pink tint, flowers. They are green, sometimes reddening, or yellow fruits of a kind elongated from one side and round in shape.

Homeland - forests of Europe and Western Asia. Cultivated in countries with temperate and subtropical climates; in the former USSR - in the southern and central regions of the European part, in Central Asia, but pears growing in the Crimea, Ukraine, the Caucasus, and Moldova are especially tasty.

Fruits contain up to 10% sugar, 0.3% organic acids, mineral salts, proteins, fiber, tannins, about 5 mg% vitamin C. Unlike apples, pears have stony inclusions, more fiber, and therefore they are more difficult to digest the body. According to the taste and purpose of the fruits, pear varieties are divided into: dessert - with oily, melting, very sweet pulp and with a light, pleasant sourness, known as Vere and Duchess, dining rooms - with fine-grained, juicy, pleasant to taste pulp - Seedling Kayfer, Saint Germain, Bessemyanka.

According to the ripening period, summer varieties are distinguished, which usually ripen in July - August; autumn in September; winter - slightly edible at the time of harvest, with hard pulp, often tart due to the presence of thick-walled stony cells and astringent (tannins); ripen during storage. In the middle lane, there are mainly summer varieties of pears. The exception is the Bere Zimnyaya Michurina variety. The best table varieties of this zone include Autumn Bergamot, Tonkovotka, Limonka and Ilyinka (they contain about 10% sugar). Only fruits of winter varieties, wrapped in tissue paper, are suitable for long-term storage; storage temperature approx. 0 ° C.

Pears are used fresh, they are used to prepare preserves, jams, compotes, syrups, juices, sauces; they are also dried, pickled, moistened, frozen.

Yesterday evening I bought a kilogram of pears and covered it with sugar, the whole family got it in their hands, because the pens turned out to be playful, tomorrow we will try such a beauty-yummy

I did it in slices, then it takes less time to dry, well, very tasty pears are obtained, only of course sticky, but this can be forgiven. I also soaked it in syrup. As the pears begin, I will make them out of halves.

And when the pears are standing, they are soaked with sugar for 30-36 hours, should they be kept at room temperature? Or in the refrigerator, so as not to deteriorate? I'm thinking of taking it to the loggia (there is now 10-15 degrees somewhere).
Admin

I kept them on the table in the kitchen. If the room is warm, you can take it to the balcony. But it should be borne in mind that warm syrup is needed to impregnate the pears, that is, that it was not at all cold.

The pears turned out to be very tasty, I cut them into slices, they turned out like candy.
How long can such pears be stored? otherwise I have already piled on 5kg and there are still so many on the way and I want to stretch the yummy for a little longer.

Admin, Tatyana, and if the pears themselves are very sweet, can you dry them without sugar? Please advise how to do it. I have two varieties, large and small. Very sweet. Somehow I wouldn't like sugar
tatianika
I dry without sugar. I cut the large ones in half. Small ones - entirely. Before drying, I dip it in boiling water for a couple of seconds. I put it on a wire rack and dry it at a temperature no higher than 70. Candied fruits are obtained with sugar. And so you can cook compote. And it's just so delicious
Natalishka
tatianika, thanks, but what does boiling water give? Pears do not crack?

Natasha, without sugar there will be no longer dried pears, but simply dried ones. You can dry it without sugar - it's just different cooking technologies: dried and dried

Candied fruits are prepared using a completely different technology, slow and long boiling in syrup, then slow drying
Natalishka
Tatyana, I just need to be kept in the room. There is no room in the refrigerator

Natasha, then we cut into strips and dry until tender - you get dry plates that will be stored for a long time.
So today I'm going to put simple pears in the night - I'm collecting a mix of fruits, I'm preparing for winter
If you really need to look, I'll take a photo by nightfall
tatianika
This is to dry faster. I once read that before drying you need to dip in boiling water. And then for a second - in cold water. Everything is so dry: pears, plums, and apples. , and apricots. But I dry it until it is completely dry, because I store it at home in 3-liter jars. Of course . the product will turn out completely different from that of the author of this post. here is dessert, and I have for compote.
Natalishka
Tatyana, very necessary. I have a lot of pears. A lot of jam from last year. No one is.
Natalishka
tatianika, Thank you. I will try in different ways.

Girls, and somebody dried wild pears? I remember once making jam from them - though I cooked them entirely - it was very tasty. And here, under my window, a HUGE tree with wild game (it tastes delicious, only small), all the branches are hanging down. Another week and the most relish will be. Well, it's for the better, otherwise I have plums, and even a can of apples is waiting in line, and candied squash, squash and of course pumpkins.

Dried a dulku - our local wild pear. Well I really liked it. They are reminiscent of Moldovan blacks, who are not currently being sold here (2 borders). Sliced about 0.7 cm thick. Soap, dried, cut, removed only the stick and the tail. The first batch has already been eaten. Today I bought 3 kg - all that the saleswoman had.

: girl_claping: Tatiana! Thank you so much for the pear recipe, I've been cooking for 2 years already, I just was honored to say thanks. In the summer, a ripe pear was dried, it is not clear that it was successful, but the day before yesterday a fall of a late winter pear. she was as hard as stone. I boiled it in syrup and came out no worse than ripe.
Admin

Natasha, to your health! You need to save the harvest, until the last fall

There is also a very successful way for pears of this kind:

Good day to all. Today I tasted homemade dried pears for the first time. The pears are from the supermarket, firm. Not a season, but really wanted to try. But .... It turned out OOOOOOOOOOO Very tasty! Thanks Admin for the recipe. Now I know exactly how I will pamper myself ... While I am just learning to use Izidrochka. But the first experience with pears impressed me.

Admin, Tanya sun-dried are not stored for a long time are eaten or spoiled?
I mean the bolkon.
Admin
In this version, pears will not lie for a long time, they are "damp" inside, there is still raw pear juice.
And as a dessert, on a sandwich for breakfast, to eat quickly, put in a filling, for tea-coffee - very good

For even greater taste, for safety, you can try to make such a fill and preserve

Admin, Tatyana, I've been cooking pears for several years, my granddaughters eat with pleasure. The leftovers fall to us. Last year, the wind broke a pear that was still unripe, it was a pity to throw it away, I cooked it in syrup a little longer and it also turned out very tasty.
