Homemade dried apricots

Ingredients

pitted apricots 2 kg.

Cooking method

  • Number of ingredients:
  • pitted apricots - 2000 grams
  • sugar for juice separation - 700 grams per 2 kg.
  • for syrup for 1 kg. fruit after juice separation
  • sugar - 300 grams
  • water - 350 ml.
  • finished product yield - 500 grams or 25% to raw apricots
  • I described in detail the principle of cooking dried fruits / fruits / berries in the topic "Home -made dried cherries"
  • In this topic, I give a brief description and photo of the process drying homemade apricots and a short commentary to them.
  • 1. Preparation of fruits
  • It is advisable to take the fruits of durum apricots.
  • Rinse apricots well in water, sort out, remove low-quality fruits, leaves, etc., let the water drain, dry on a towel.
  • Remove seeds from berries. Try to keep the berries intact, so the berries look nice and whole.
  • Weigh pitted apricots, how much sugar you need to take depends on this weight.
  • 2. Removal from the fruit of its own juice
  • I got it after weighing 2000 grams of apricot.
  • According to the scheme, for every kilogram of pitted apricot, 350 grams of sugar is required, I have two kilograms of apricot, which means I weigh 700 grams of sugar.
  • I put the apricots in a large saucepan, add sugar, mix well, leave for a while to separate the juice. Stir occasionally with a spatula to dissolve all the sugar. Try to stir gently so as not to damage the berries.
  • To keep the berries to separate the juice should be about 24-26 hours, at a room temperature of 20-22 * С
  • Homemade dried apricots
  • Next, put the colander in a large bowl, put the berries in it, and thus let the excess juice drain. Shake the colander periodically, trying to make the berries release more juice.
  • Homemade dried apricots
  • Next, we weigh the remaining fruits without juice, this will be the calculation of water and sugar for the syrup.
  • Apricots without juice on sugar are very tasty, but you still feel that the berries are raw to taste, the sweetness is "raw", the stickiness of the berries is not so.
  • 3. Soak the fruits in hot sugar syrup.
  • According to the scheme, for each kilogram of pitted cherries, 300 grams of sugar and 350 ml are required. water.
  • I pour water into a saucepan, add sugar, stir, let the sugar dissolve and the syrup boil.
  • I pour apricots into the syrup, stir, let it boil, immediately reduce the heat to low and let the fruit stand at low boil (whispering the syrup) for 7-10 minutes. Stir periodically so that the fruit is soaked in the syrup evenly and completely.
  • I turn off the heat, leave the saucepan with berries to infuse in hot syrup, until the syrup cools down to about 40-50 * C, until warm, while the berries are still warm, but the sugar is not frozen and the berries are not sticky
  • Homemade dried apricots
  • The purpose of this operation: to achieve the replacement of the allocated juice (essentially water) with sugar syrup, which is a berry preservative, gives the berries a taste, the possibility of easy drying, long shelf life.
  • After cooling the berries, pour them together with the syrup into a colander, and leave for several hours until all the liquid is removed from the berries. Shake the colander periodically.
  • After processing the fruits, a lot of good, full-fledged, rich in taste and color apricot juice remains. such juice can be preserved and used in the future for jelly, impregnation of cakes, fruit jelly, and so on.
  • Homemade dried apricots
  • 4. Drying, drying of fruits
  • I put the apricots on a baking sheet of the electric dryer. I spread it on the net so that it doesn't fall through. She substituted solid trays from below, there was a danger that the juice would flow. But, the fruit was well made, the excess liquid was almost completely removed, so solid trays / plates were not needed, remained clean.
  • Homemade dried apricots
  • I turn on mode 3 (Isidri) at once, the temperature of which corresponds to about 55-65 * C, and the process of drying, drying the apricot has begun.
  • Mode and time of drying apricot:
  • mode 3 (55-65 * C) 3 hours
  • mode 1 (35 * С) 3 hours
  • The finished product.
  • The apricots are dried. It tasted like soft dried apricots!
  • Homemade dried apricots

Note

It's time for the apricot to come to an end, so I got very ripe apricots, and therefore the finished dried apricots turned out to be soft.

For these purposes, it is still better to choose hard or slightly unripe apricots, so that less juice is released, and the finished product is more elastic.

But, the product turned out to be dangerous - the palatability is high, you can persuade everything in one sitting! DELICIOUS!

Cook with pleasure and bon appetit!Homemade dried apricots

The first one went ....

Thank you for cooking and even liked it

Really tasty, and I want to pack everything right away, and the way out is small
Made apricots for the first time! I don't know how to store it myself! It is recommended to store in paper bags! But in bags ... the fruit is sugar-coated and sticky!
I assume two options - a freezer and a can in the refrigerator.
How much to store! Recommendations too, throughout the year. But you are unlikely to withstand that much ... very tasty

Let's in fact see who will not eat longer than apricots

And if, after step 2, do not drain the apricot syrup, but just add a little sugar and boil? then onto a sieve and into a dryer (I also have Isidri).
There are 2 buckets of apricots, the same number on the way. Therefore, I do not want to be very confusing, but it is tasty to dry or wither them + marshmallow, of course.

Happy I love apricots very much ... only we don't have them, they are so tasty

Lena, I did that later, added sugar and boiled apricots. Just do not let them boil so that they are soaked in sugar and become a little soft, but they keep their shape.

Lenochka, to your health! The taste is great !!!!!!
Therefore, I don’t make them anymore. My apricots aren’t there, and I don’t make a lot from purchased ones - it’s expensive

The process was not entirely smooth and took a little longer than in the recipe, but the result was pleasing. From 2 kg of berries with a stone, 320 g of dried were obtained.

: hi: That's it! Tomorrow I will run for apricots, and on Friday I will prepare them with me to the village. There I will dry out in the dryer.
Satalya
Admin! Thank you! Delicious apricots turned out! Only I did not prepare the second syrup with water, but carried out all the manipulations with the primary syrup, the sugar was right next to it, I was afraid that there would not be enough. I'm going to experiment with pears. I also bought zucchini, I also want ...
How to store finished products?

WELL DONE!

Just be sure to boil the resulting syrup to boil the juice, otherwise the raw juice will spoil the fruit.
Zucchini is power! The eatability is high! But on the other hand, zucchini can be cooked all year round, and even as a present on a festive table, guests can be shocked

And we have a topic Storage of dried and dried products https://Mcooker-enn.icdself.com/index.php@option=com_smf&topic=142560.0 , people share their experience

Thanks to Admin for the super recipe. I have already rolled 10 kilograms. The result is simply excellent. The first, as the author wrote, fell asleep with sugar for a day, then boiled it in the released juice with the addition of sahah, and then, in order to save time and sugar, I add 100-150 g of sugar + new apricots to the juice with sugar from the first apricots + new apricots (2 kg no longer fit in a saucepan) bring to a boil and leave to cool under the lid. Then I take out the apricots and let them drain and dry. The next day the next batch is already the 5th day
The first batch turned out to be darkish, and all the subsequent ones that I simply brought to a boil much lighter. Maybe this is falling asleep with sugar so it affects the color
Satalya
marinal , but do not add water to the syrup?

marinal , but do not add water to the syrup?

You get a lot of own juice from apricots, especially a large batch. Therefore, you do not need to add water or dilute the syrup. And then the syrup can be canned, it goes very well as an additive in confectionery

Thanks Roma for the answer. Yes, no water, sea apricot syrup. And by the way, you can then somehow boil it down to get a concentrate? And in the winter I took a couple of spoons into a glass with a mini-rake here tei Fanta I don’t know how to boil down.
Satalya
All clear! Already canned the juice. Tomorrow I will make a new batch.

I think you can try. Over medium heat, so that some boiling is noticeable, add sugar to thicken. But not to boil it at all, it will take a lot of time to not bring the jam to the jam and the result will not be the same
Pilgrim73
Oh girls! How are you on time with your questions and answers! Now I also put apricots and cherries to dry. Thanks to Tatiana-Admin for the miracle recipes! Everything is designed very clearly, accessible and understandable! What would I do without you?
marinal
I'll try to boil it down enough time, and how many percent boil it down.
Another question ... I remove dried apricots from drying when they are dry on top and do not stick to my hands and inside is soft, but not dried almost to a crouton, since it dries up when it cools down and turns into croutons if overexposed. So this is the essence of the question ... Soft inside, it is insanely tasty, but will it not bloom from this if stored in the refrigerator, for example, on the door ?? Thank you

I would cook until the syrup is thick, but I won't tell in time

My dried apricots haven’t been stored for so long, almost all of them cracked right away, passing by her while she wanted to dry out completely.Since then, I don’t do it, there is a lot of work, they eat it right away, and the price of scrap apricots
Zucchini are cheaper, although they also eat quickly

Tanya, tell me, if you just put apricots in halves without boiling, will they dry up? And then I have not read the forum already loaded the drying foolishly. Over the past hour, the berries have already slightly aired. Apricot sea is simple, I do not have time to process.

I didn’t quite understand how cheap zucchini replace jumbled apricots. Where did I miss
Anna1957
And if you sprinkle diced zucchini with sugar, squeeze the resulting juice and boil in cherry or apricot syrup? I just rolled it into bottles, a lot is obtained when drying. Maybe the zucchini will turn into candy after being in cherry syrup and then drying?

They will dry even in halves, only they will dry longer. And it will be just dried apricots. Dried are made after pretreatment with sugar syrup.

At the weekend, the apricots wilted. The yummy turned out to be amazing! True, I did not add water to the syrup at all. I covered the halves of the apricots with granulated sugar overnight. They gave juice, then dipped apricots into this boiling syrup and cooked it on low heat for no more than 3 minutes. When the apricots dried up, their skins were covered with a thin layer of sugar glaze. And with the syrup, I did the following - I cooked blueberry jam on it. Tatyana, thank you very much for the recipe and for the information on drying fruits and vegetables. Everything turns out great and Oooh ... very tasty!

Natasha, FOR HEALTH !!!

It's a pity that our apricots are expensive

It’s a pity. I tried to plant apricots - nothing happens. The sweet cherries grew huge and yielded 5 sweet cherries, although the taste is excellent, yellow-pink. I never bought so sweet in the market. And the Russian plum turns out. So we will dry it in large volumes.

Tanyusha, I didn't have a hard, ripe enough coloration in the amount of two buckets ... And I just boiled the first batch, and then I figured out that it was impossible to boil it in syrup, just keep it hot for a minute, at 80-90 degrees. And take it out immediately. The day after tomorrow there will be another apricot, so I will try it, taking into account the mistakes.
Admin

Eh, Tanyusha, I got two buckets of jam but it's also delicious!

Not jam, everything went for dried apricots! Only the first batch (first tray) failed, everything else is as in the photo.

Why doesn't it work? Just a long time. I have dried simple apricots (not dried apricots) for about 20 hours.
