Tomatoes in tomato sauce

Ingredients

Round tomatoes or fingers
who and how you like
Spice
coriander seeds, mustard, dill
1 \ 2 boxes l.
Peppercorns 3-4 pcs. for one can
Pouring marinade
calculation per liter of water
Apple cider vinegar 1/2 cup
The oil grows. 1/2 cup
Sugar 1/2 cup
Salt 1 tbsp. l. with a slide

Cooking method

  • I always use only fresh tomatoes for filling.
  • We replace water with tomatoes - about 1 liter of water is equal to 1 kg of fresh tomatoes.
  • For me this is a lot of oil, I add very little just for the softness of tomato juice - I added 100 ml. for 3 liters of juice.
  • - We put the tomatoes in banks. Add spices.
  • - We do the filling: I break the tomatoes in a glass blender to juice. I pour the juice into a saucepan, add vinegar, oil, salt, sugar - and bring to a boil. Taste it!
  • - I pour tomatoes and cans with marinade and set to sterilize: liter cans for 10 minutes, one and a half liter for 15 minutes.
  • - I roll up the lids and put them on the lids until they cool.
  • All! We get delicious tomatoes in our own juice.

Note

Yesterday I made these preparations - almost the last autumn ones.
Someone else remembers that such tomatoes were in stores, they were stocked with boxes at that time.

Bon appetit everyone

These are unpeeled tomatoes! Just look like that

But it's a matter of taste, you can also make peeled tomatoes, it will also turn out delicious
cicass

I don’t know how until now no one is interested in the recipe. Girls make tomatoes, they are UNLIMITED. The juice turned out great, and in general the tomatoes are Delicious

I also really like tomatoes in their own juice, but I have never made them myself, I just bought them, so I want to understand for myself - how much does about a tomato fit into a liter jar if it's tight + tomato filling? Probably about 1 kg, because on average 2 kg fit into three-liter cans.

rusja , stumped

Never counted! But tomatoes are heavy in weight, maybe about kg. and enters.
I put tomatoes in a jar, count their number in the jar, then pour in plain water, drain and measure - that's the amount!
When making a marinade, then a little more, so that later you can additionally top up if necessary.
Tomatoes are raw and take in liquid well when heated.

Good luck! Tomatoes are delicious, do it for your health!

Everyone has their own way, of course, but I blanch the tomatoes for each jar in boiling water for several minutes and immediately put them in jars, pour them with boiling marinade and roll them up. We also make plums, apples-pears for compotes, only there is syrup, naturally. For these purposes, they even sewed gauze like a bag and very good. it is convenient to put and take out in it.

Admin, and I'm here to boast again, yesterday I was driving from the south and bought another 60 kg of tomatoes, everyone demands them according to your recipe. Already 6 cans have been "worn out". Thank you, now I'll twist it some more
Admin

It's so nice to hear how you "trample" them.
And another 60 kg. on the way

Bon appetit and delicious tomatoes

Oh, it's so nice to know that everything worked out and liked it! So tomatoes will be registered with you permanently!
Try to make cucumbers in tomato on the same principle - I really like

Eat to your health!

So here they are, the first time made according to your recipe, last year - they go with a bang!
I just bought a special meat grinder-juicer (mechanical) for tomatoes / grapes with an opportunity, so I already enjoy this juice-tomato paste and make lecho your tomatoes
Only now the question arose on sub. butter, but is it necessary there? Is it somehow a fundamental component of the recipe, or is it possible without it or with less?
Admin

As for the oil, this is how you like it more, you can do without oil at all

Cook for health!

Admin, I am grateful for your tomatoes! We eat all winter and remember you with a kind word. I used to make them too, but with 9% vinegar, but with apple cider for the first time. I liked the taste very much, I will do more in the summer (future tomatoes have already hatched)

Marina, I did not write this on the forum - I have not made vinegar for a long time. I buy apple cider vinegar, or other aromatic vinegar, balsamic - I use it in cooking or salads.
For preservation I use natural apple cider vinegar - for my beloved, more expensive, but natural

I met at the forum - someone was preparing homemade apple cider vinegar - use the search, it must be!

For 1 liter of water 1/2 cup. apple cider vinegar, won't it be too much? Admin, tell me, this vinegar feels intrusive, I just never canned it with apples. vinegar? And tell me, please, 1/2 cup is about 120 ml.?

No, not too much, it has a total strength of 6-9%. You can do more / less to your liking.
I don't make a strong marinade so as not to feel the strength of the vinegar.
Half a glass = approximately 120 ml.

I buy and preserve everything on apple cider vinegar, I buy in glass, German vinegar is natural vinegar, it is more expensive than plastic, but transparent and pure.
It's better (in my opinion) than plain vinegar.
Irina F
Admin, thanks a lot for the advice, I didn't even know what can be canned with apple cider vinegar! I know this German, I'll go buy it today. And tell me, can you close cucumbers with him?
Admin

Irina, I do all the preservation with apple cider vinegar, with rare exceptions.
And I am cider vinegar softer in taste than wine or essence.

Admin, Spun 3 2-liter bottles (with a smaller container is already problematic). Thanks for the interesting recipe!

Elya, to your health! I hope you will not be disappointed in winter. I will wait for your impressions of the eaten
Mona1
Admin, but tell me, there spices are indicated in coffee spoons. This is 2 times less in volume than in a teaspoon, that is, equal to 1/4 teaspoon per 1 liter. ?

Well, something like this. But this is a matter of taste, you can put it in full, but I think 1/2 will be just right
Elya_lug
That's bad luck, but I confused a coffee spoon with a dessert spoon, but put a little less spices, especially dill. I hope it will still be delicious.

Admin, I want to try your tomatoes in the filling, only if I make slight adjustments, the taste will change a lot? I want to remove the oil completely, I don't like the oil in tomato juice .... and vinegar, if you cut it down a bit too, what is the minimum you can get? Tell me what?

The oil can be removed, the vinegar can be cut and taken to preserve the acidic environment in the tomatoes, although tomatoes are acidic. Once upon a time, I generally canned tomatoes just in salt water, without vinegar, it turned out "unpeeled tomatoes" to taste.
Determine the minimum by taste, a little acid to be.
RybkA
I report that I removed the oil completely, left the salt / sugar as it is, and gave 65-70ml of vinegar for 1 liter. I also took apple German, it tasted very tasty. I just rolled up the rest of 0.5 liters of filling. Then I'll go for stuffed cabbage or somewhere else I'll attach a thread :-)
Thank you
Admin

That's fine! In winter, tell me how it tasted when the tomatoes were infused and the taste was revealed!

To your health!

Do you also make juice from unpeeled with a blender?

I do not peel the tomato, It breaks perfectly into dust with a blender, and it does not bother me in tomato juice. If desired, you can remove the skin
| Alexandra |
Thank you - there is absolutely no desire to remove the skin from tomatoes, and in all book recipes this is usually recommended. And I only have apple cider vinegar in the house, though I take Spanish in glass, it is a little cheaper than German. So your recipe suited me very much, thank you very much!
Skarlett
Admin, please tell me how long to sterilize 3-liter cans?
Admin

I set to sterilize: liter cans for 10 minutes, one and a half liter for 15 minutes.
And I would not sterilize tomatoes for a long time - 20-25 minutes will be enough.
Skarlett
Thank you.

Hurry, winter!

Wow! They stand in slender rows
Winter will come very quickly, there is no need to rush, it will be cold

Irishka, FOR HEALTH! Ready for winter!

I can't wait to try.
I closed it for the first time in a tomato. The basement is getting too small for me
Admin

Aha! And the kitchen is too small for pressure cookers, and the basement for cans, and now what to do?
Irina Sht.
Either accept or expand. I don't get tired of dreaming. The kitchen is huge, and so that the basement is right from the house, in slippers ...
V-tina
Tanya, closed 6 8 (I forgot how to count, yeah) jars, of course I changed a little for myself, where without this thanks for the recipe for delicious
Admin

Tina, FOR HEALTH!
Good yield 6 jars Well, of course, for yourself - but how else!
V-tina
Tatyana, took 2 buckets of tomatoes - one for juice, the second - in jars. The juice turned out to be almost 6 liters, of course, 8 cans of tomatoes (the rest were not of a condition) is not enough for so much juice, well, I wound up 8 cans with different herbs, seasonings, put 2 more cans (from substandard) to eat for the near future, and another liter I rolled up a bottle of juice, then I'll make peppers with it, cabbage or zucchini Thanks again for a good idea
Admin

Tina, well, yes, driving juice is a costly business. Maybe the tomatoes are not juicy? Another option: you can dilute the thick juice with water by about 1 / 4-1 / 3 of the volume - then the taste of the tomatoes will be preserved and its consistency, and there will be more filling.
V-tina
Tanyush, on the contrary, there was too much juice, I didn't measure all the large tomatoes, I passed them through the juicer and 4 liters of juice left for 8 liter jars with small tomatoes, and the remaining one was already rolled into bottles and put 2 jars for the near future
