Sun-dried zucchini

Ingredients

fresh zucchini 1 kg.
lemon juice 1 PC. or to taste
orange peel 1 PC.
white sugar 500 gram

Cooking method

  • Required:

  • Cut the zucchini into circles 2 cm thick, but not thinner than 1.5 cm, we get rings or full circles.
  • Put the zucchini in a bowl, add the zest from one orange, 200 grams of sugar, mix gently with your hands, do not break the rings.
  • Sun-dried zucchini
  • Leave the zucchini to infuse to extract juice from them, for about 5-6 hours, periodically stir gently so that the zucchini are covered with sugar syrup and juice is released.
  • Sun-dried zucchini
  • Separate the zucchini from the released juice, transfer them to a sieve-colander, drain the remaining juice into a saucepan.
  • Collect all the juice in a saucepan, add 300 grams of sugar, the juice of one lemon, let the syrup boil.
  • Transfer the zucchini to a saucepan, along with the orange zest, and mix gently.
  • Boil the zucchini over low heat until they become transparent. Do this carefully so that the zucchini is not soggy or overcooked. It is better to undercook a little until transparent, turn off the heat, and let stand in hot syrup.
  • The principle of this operation: extract the raw juice from the zucchini, pour it into a saucepan, boil, and then fill the zucchini with hot sugar syrup - this is preservation with sugar.
  • Allow the zucchini to soak in the sugar syrup, cool until warm, transfer the zucchini to a sieve to drain the syrup into the saucepan.
  • Arrange the zucchini on trays on a grid, put slices of orange zest on top of the zucchini, put in the dryer.
  • Sun-dried zucchini

  • Drying time: 4-5 hours.
