After the first whipping with the cream, everything was fine, but I still want something good, and I decided that I still need to add milk for a more delicate taste, and I did just that! and my mixture, after re-cooling, stratified into buttermilk and cream
I didn’t torture the cream anymore, I carefully poured the excess liquid through a strainer, whipped it a little more and lo and behold, the cream turned out!

The resulting cream was divided into three parts:
- smeared cakes and sprinkled with grated white chocolate;
- spread the cakes, melted the white chocolate, poured it over the cream, put it in the refrigerator;
- and the third part of the cream was mixed with the rest of the condensed milk and, again, cakes in the refrigerator.

The mass for the meringue turned out to be very cool. She barely interfered with the shavings, my hand was tired.
I whipped the whites strictly according to the recommendations. Sugar was added in small portions. So the last portions, well, did not want to dissolve into any ... I beat for about 10 minutes, then it seemed to me that everything was falling off, threw it and put it on a water bath - I thought that it would dissolve faster in the heat. Well, it seems that things have gone, but still not completely - after all, there are not many grains, but there are. And on the bowl I have such a decent layer, 2-3 mm, of dry protein, with a spoon that is almost indestructible. The water in the bath boiled just a little.
Cake, what did I do wrong? Maybe you can have less sugar than a glass? If so, how much less?
