Salmon muffins

Ingredients

Pancake flour
(I just take the pancake)
150 g
Salt
Egg 2 pcs.
Baking powder 1 tsp
Pink salmon in its own juice 1 b.
it's about 220 g
Sour cream
(originally it was yogurt
with the addition of tsp. draining. oils.
On sour cream is softer, of course)
170 g
Dill bundle
Freshly ground black pepper
Diced mozzarella 80 g

Cooking method

  • Just biting fresh and lukewarm is no longer needed. Fish, even in muffins, is good hot and fresh. No troubles such as a blender and mixer are needed either. Bowl and whisk. We break the eggs, beat a little, sour cream there, seasonings, salt, then baking powder and flour. The fish flows around at this time. We knead it with a fork, add herbs, cheese and bake in tins greased with butter for 15-20 minutes at a temperature of 190 degrees (I have 180, since it is convection). All.
  • Salmon muffins

The dish is designed for

10 pieces

Time for preparing:

15-20 minutes

Cooking program:

190 degrees

Note

The original recipe was published in Recipe Collection magazine and was called Tuna Cupcakes. I don't like tuna. Well, somehow it didn't work out with him. I can't stand apples with cinnamon either ... But with salmon in any form, a big warm love has developed. More precisely, I have to go to them. They usually don't care anymore.

I am very grateful to them for this recipe, as it turned out to be excellent snack cupcakes. True, I made some gag and slightly adjusted it to suit my taste, but the recipe is still close to the original, so I refer to the publication. So ... Now, after some of my intervention, the recipe for these cupcakes looks like this.

Mozzarella is also a gag. I wanted to add cheese to fish. The choice fell on mozzarella. Firstly, mozzarella has a freshish creamy taste and, when baked, gives a very soft note to cupcakes (and not spicy-cheese and does not make the taste harsh), and secondly, it is cut into cubes, and not grated! (it should not dissolve in the dough, but be inclusions), and, thirdly, when breaking a warm cake, these inclusions of cheese are visible and the mozzarella is pulled out with appetizing threads ...

Lolo
Wow, how lovely !! Everything, I ran to do
And here is the cupcake
Salmon muffins

I didn't even look for a whisk, I did everything just with a fork. I took the most common cheese, instead of dill - green onions. Scarecrow, dear, thank you for the wonderful recipe, I ate four pieces at once, without leaving the checkout
Scarecrow
Did you like it? Perfectly! You couldn't ask for more.

They can be finished the next day (if left over) and it is better to warm them up a little in the microwave before eating. They again become fragrant and tasty as fresh.

Girls, if there is no pancake flour, then which one can I take?

Pancake flour is a mixture of plain flour, milk powder, salt, sugar, egg powder (sometimes), and baking powder. So you can take the usual one without a twinge of conscience and add a little all of the above. And if you don't add, nothing fatal will happen ...

girls I do not have time to write down after you! when will I do all this
Chuchelka, thanks for the recipe, I think under what alcohol it can be used .. beer?

I think that under the white dining room will be the very thing

Also a great option! It is believed that fish dishes go well with chilled white wines.

Oh, now I'm going to salivate ... I personally just used prune muffins for red wine ... But fish is my weak point ..

And I made them with trout - mine love it more than salmon. At first, they were afraid to try - somehow they associate cupcakes with sweets. And then they tasted and dared at the moment! Some with beer, some with white wine. Thanks, great recipe! It will taste like Stolle pies popular in St. Petersburg.

What kind of trout? Boiled? Stewed? Baked? For some reason it seems to me baked. Can you really stuff lightly salted there? Awfully curious, I tried to add canned food there ...

:) Canned,Scarecrow!
Chantal
hmm .. I didn’t see canned trout, and I made such cupcakes, I bought pink salmon canned food specially thanks for the recipe. It turned out very tasty, but the molds I have are hefty curly, so it was useless to take out the cupcakes - they were picking spoons straight from them

And silicone molds?
Chantal
yes if ordinary metal, it seems

If Teflon - I pull out quite normally, but with just metal - I personally have a complete ambush. How angry I was. I translated everything. I make cupcakes only in silicone. From silicone, pre-coated with vegetable oil, they pop out like family ..
Stern
Well, as promised, I baked it yesterday. : :) Very tasty and unusual !!!
Thanks for the recipe!
Sour cream put 200 gr, feta 125 gr. But it turned out 12 pieces! Baked in silicone molds. I did not lubricate the molds with anything, they are silicone, so that everything would pop out of them without lubrication.

Beautiful, contagion! Feta like in muffins? It doesn’t melt, after all. I thought it would give "wetness" or mix (it is tender, the cubes fall apart easily). However, in the photo they are visible safe and sound.
Stern
I already know how feta behaves in the test - I was tormented with it sometime.
I just dried it very thoroughly and it proved to be wonderful! And the combination of feta, fish, dill does not need comments!
Chantal
and here are my cupcakes, for the lack of molds, I used coffee cups - well, at least in this quality they came in handy

Salmon muffins

pay attention, the cupcakes slightly skewed the baking on convection, as I understand it, they were drawn to the heat?

Honey, thank you very much for this recipe! Even my "antediluvian" oven coped with them! I got 12 pieces, in the photo what is left after my girls "a little" tried ... True, after baking, the "hats" fell off slightly, probably due to the fact that I very often poked my nose into the oven ( I was afraid that they would burn) ... These are the cupcakes I got:

Scarecrow, expensive!
Take another thank you for your recipe! My family is very fond of these cupcakes, yesterday they baked another one, it turned out a kind of "Fish Bear":
I baked for 30 minutes, but I have an oven ... Mom, don't worry! In a good oven it will probably be faster!

Scarecrow, thanks for the recipe!
We haven't got a cake pan yet, but it's also delicious in the shape of a cake!

But my cupcakes are really nothing, I haven't tasted it yet, at the same time I tried new silicone molds, only cupcakes with holes

People and in fact very tasty and unusual !!! Only with salt I overdid it a little, did not take into account that the pink salmon in the jar is already salty and the mozzarella does not last like in the picture. Thank you Chuchelka !!! So far, everything that was done according to your recipes pleases the eye and the stomach !!!!!
Scarecrow
Beautiful golden cupcakes to look at. Congratulations on mastering a new type of dish.
Cupcakes are not only sweet, but also eateries, as are waffles (Belgian bacon waffles - mmmm ...).

Have you tried them hot or well warm? If allowed to cool, the mozzarella will stop stretching. She's so ...
nut
I tasted it almost cold, and it also seemed to me that compared to yours, mine did not rise very much. I give a discount on the fact that I took the usual flour and 1 hour. l. baking powder is probably not enough. You have a pancake, and there is already a baking powder + 1 tsp. In the next. just put a little more, but the main thing is TASTY !!!!!

Scarecrowthanks for the cupcakes

My dietary rework, as well as a change in filler: whole grains on zero cottage cheese and kefir with shrimps, green peas and green onions

Salmon muffins
Scarecrow
Wow rework!

This is your own recipe! And what shrimps? Boiled and peeled? Or defrosted ready-made? Were green peas superfluous there? Maybe shrimp, cheese and greens? I want those too ...
Alexandra
Scarecrow,

There was nothing superfluous. Everything sounds very harmonious in these cupcakes.
The king prawns were boiled-frozen, peeled but with tails. Without defrosting them, I chopped them into small pieces, removing the tails, mixed with lemon juice, lemon pepper, Provencal herbs, paprika and Kamisovsky dried tomatoes. There was simply no dill at night, but it was the smell of baked green onions that I liked the most. They recalled my third-generation potato casserole with minced boiled meat, onions and cheese, they said that the smell was the same. Green onions were not enough, 4 arrows, so I added peas, frozen without defrosting. It turned out to be very appropriate, remained green and tasted rich.

Any components are possible, I think. Option would be crab meat. Well, they don't eat my fish at all. And I don't have so many cupcakes alone
Ukka
And I baked muffins! What a yummy !!! Om-Nom-nom!!!
There was no cheese, I replaced it with homemade cottage cheese. Baked in silicone, without greasing, jumped out onto the plate themselves. And there is nothing to photograph ...
SchuMakher
Scarecrow finally I got to your cupcakes, put them in the oven, wait, though I replaced the cheese with chechil (there was no other one), and put pepper + lime from Santa Maria for seasonings
Scarecrow
Tek-s, I'll wait. Usually these muffins are viewed with skepticism, but then they make an unexpectedly good impression.
SchuMakher
It's delicious a priori! That after tasting it was confirmed

I don't see the dismembered parts, but they look great. And I really want to eat ...

Is this 10 pieces from a portion of the dough?

And now I see.

I never ate chechil. And what does he actually resemble (in the sense of what kind of cheese) and how did he get along there?
SchuMakher
Chechil, these are such smoked pigtails, and cheese like suluguni .... The taste of muffins is like good spirits with an aftertaste, at first there is a pronounced taste of smoked cheese, and then the salmon comes out, abalde !!!

yeah, 10 of that serving ...

I read here about these cupcakes and could not stand it. I went to the oven. Night outside, and at home not a single can of salmon, trout, pink salmon or tuna. As luck would have it. But a jar of sardines was lying around. There was no mozzarella either. There were 50 grams of simple Ukrainian cheese. But I am missing it 30 gr. compensated with green onions. Fortunately, it grows on the windowsill. The flour was simple, and I added some powdered milk and sugar.
Nobody went to bed. They were waiting. I took it out of the oven half an hour ago. They were eaten during the extraction process from the molds.
In the morning I will buy prescription products. I can imagine what will come of them!

Scarecrow, thanks for the recipe.
Scarecrow
I have no idea how with sardines, but apparently it was good. Salmon is also worth trying, these muffins are surprisingly tasty.
With new impressions you!
antioshka
I came to you with gratitude for your pink salmon muffins. Of course, such beauty as in your photo did not work out for me, but the taste is something Gobbled up in an instant! Thanks from my guys too
SchuMakher
Burning again ... This is some kind of madness. I made it according to the recipe, with mozzarella is more tender than with chechil and less salty! Thanks again for the recipe !!!
Scarecrow
Yes, girls, about "gobbled up" - to the point ...

The son comes up to me, nods at the muffins they pulled out of the oven and asks what they are with. I say that with an apple and carrot. He is so disappointed: "And I was thinking with the fish!" It would seem - to force the children to eat pastries with fish ... And mine are specifically hooked ...

It will taste like Stolle pies popular in St. Petersburg.

Do they remind you of the Stolle fish cakes? That's it, I'm going to do it! Stolle is a song! Moreover, it is from St. Petersburg, in Moscow there is already something wrong ...
Elena4ka
super recipe! And most importantly - a ready-made portioned snack, when "a drink on the go"
Just a trip to nature is planned soon, I will do such a miracle with yogurt and tuna.
nakapustina
Scarecrow, just took the muffins out of the oven. I did everything almost according to the recipe, only instead of mozzarella I put Russian cheese and 1 teaspoon of sand. My mother and I ate 2 pieces each hot, no matter how bad it was for the old woman, I am sending my photo rest
Salmon muffins
Scarecrow, very tasty, unexpected and fast! Thanks as always
Scarecrow
They look great! I haven't done them for a long time.
SchuMakher
Natah, another thanks for the cupcakes! But I, as always, was original ... there was feta current in the refrigerator, and I bought pink salmon (blindly) in tomato sauce. The result is excellent
xoxotyshka
Scarecrow, thanks for the recipe. The cupcakes turned out, you can say "with the world on a string", your recipe, but for the place of pink salmon - fried salmon with onions. Instead of dill or green onions - frozen peas like Alexandra's. Plus cheese "Russian" cut into cubes. The muffins turned out to be wet, fishy-cheese, and generally very tasty. Thanks a lot, everyone. I will definitely post a photo, but later.

Please, tell me for those "who are on the armored train" How is the filling mixed with the dough? Should this be done already in the mold? A spoonful of dough, a depression in the dough + a spoonful of filling + a spoonful of dough? I'm a complete dilettante in this
SchuMakher
Mix everything in one bowl and put it in the tins
Scarecrow
Just don't beat the salmon with the dough. Mix the dough with whatever you want (with a whisk, mixer, blender), put the fish and gently stir it with a spoon with the dough.
