Mom's apple pies

Ingredients

DOUGH:
Sour cream 200 g
Margarine or plum. oil 200 g
Flour 2-2.5 st.
Salt pinch

Cooking method

  • This dough makes 32 pies, fear not, they are small. Very convenient for guests.
  • Soft margarine (butter), but not melted, just take out of the refrigerator beforehand.
  • Knead the dough, it is perfectly kneaded by hands. Add flour until a soft, non-sticky dough is obtained. Cover the dough with a towel, let stand for a while, but for now, cook the apples.
  • You need 4 medium sweet and sour apples, the best, of course, Antonovka, but other sweet and sour varieties are also suitable. We cut the apples into 4 parts, peel them and divide each quarter in half across. Do not peel the skin. It turns out 32 pieces. It's a good idea to round off sharp corners slightly, just cut them off. Put all 32 pieces in a bowl, sprinkle them with cinnamon, wholeheartedly, 1-1.5 tbsp. spoons. And it's good to roll so that they turn brown:
  • Mom's apple pies
  • We divide the dough into 32 pieces, it's simple: in half, then every half in half, then every quarter in half, etc. - up to 32.
  • Prepare two bowls: one with a beaten egg, and the other with sugar. Prepare a baking sheet: cover it with baking paper and lightly grease it with rast. oil.
  • We start sculpting pies: we take a piece of dough (1 of 32 that we cut), knead it in the palm of our hand, put a little sugar there, at the end of a teaspoon, put a piece of apple on top and cover it with dough, making a knot on top.

  • Now we dip the nut with the sealed part in the egg and sugar, leaving the bottom clean and put the pie on the sheet on it.

  • All sills are placed on a regular baking sheet from the oven. They don't grow too big when baked, so they can be stacked side by side.
  • When baking, juice with sugar can flow out, caramel is formed. Therefore, they must be removed from the sheet warm, but not hot! But not entirely cold, otherwise they will stick and it will be difficult to remove them whole.

Maybe the dough really swam a little, it's because of me. I just made the dough, and it left me not 2.5 cups, and 2 and 3/4, that is, exactly 445g. flour by weight. I have a regular 250 ml glass, not measured from HP.

My 250 ml glass. and it includes 160 g of flour. That is, 2 glasses is already 320g. A 2.5 stack. - this is 400g. flour and that's enough. 290 is, of course, not enough. But those pies in which I put 445 g of flour are very tasty, of course, as always, but when the flour is a little less, they are softer, in my opinion.
In short, in the final version I would write 350-400 g of flour, and then everyone makes allowances for the quality of flour and their taste.

Or, for example, cook some kind of vegetable mixture, for example, eggplants, sweet peppers, green onions, stew all this (together or separately), different herbs and there cheese in cubes - why not a filling!
