Semifreddo - Iced Almond Cake

Ingredients

Peeled almonds 250 g

powdered sugar 150 g
Cream
Eggs 3 pcs
Butter 250 g
Powdered sugar 60 g
bitter chocolate 150 g
Cognac 20 ml
Almond crumb 3 tbsp. spoons
Cold strong espresso 200ml

Cooking method

  • Preparation:
  • Dough: preheat the oven to 150 ° C. Fry the peeled almonds in a skillet without oil and grind in a coffee grinder. Mix almonds with icing sugar. Whisk the whites into a strong foam and mix with the almonds.
  • 1. Divide the dough into 3 parts. Roll each piece between two plastic bags to make a round cake with a diameter equal to the diameter of the mold (about 24 cm). Bake the cakes one by one in the oven on the middle shelf for about 15 minutes. Cool the cakes.
  • 2. Filling: Beat 3 egg whites until firm. Beat the butter, yolks and powdered sugar. Add proteins in spoons to the yolk mass and mix gently.
  • 3. Mix cognac with cold coffee. Put the first crust on a dish, soak about 1/3 of the coffee mixture.
  • 4. Spread 1/3 of the cream on the cake and smooth.
  • 5. Grate 50 g of chocolate. Put half of the chocolate on the cream. Then put the second crust, soak it with 1/3 of the coffee mixture, put the cream, and on it - the remaining grated chocolate. Do the same with the third cake, but the top layer will be cream (no chocolate).
  • Put the cake in the refrigerator for 4-5 hours. Briefly put the cake in the freezer from time to time. Grate 100 g of chocolate very coarsely. Sprinkle the cake with chocolate and almond crumbs before serving.
  • To say that the cake is simply delicious is to say nothing. It is very tasty!
