Wheat-rye malt bread (oven)

Ingredients

Wheat flour 290 g
Rye flour 210 g
Potato broth + yogurt = only 325 ml
Salt 1.5 tsp.
Sugar 1 tbsp. l.
Vegetable oil 1 tbsp. l.
Yeast 1.5 tsp.
Fermented dry rye malt 2 tbsp. l.
Liquid barley-malt concentrate 2 tbsp. l.
Instant chicory (for dark colors) 1 tbsp. l.
Bread Spice Mix 1 tsp

Cooking method

  • The dough was kneaded in a combine: kneading for 5-7 minutes, rest for 20 minutes, kneading for 5-7 minutes.
  • The dough after kneading is liquid and sticky. Gathered the dough into a pile with a spatula.
  • Proofing in the oven at 30 * C until the dough is doubled.
  • Now kneading dough and forming oval bread , then 2 proofing in the oven at 30 * C for 10-15 minutes. Then I take out the dough and turn on the oven for heating 220 * C, heating takes about 15 minutes, this time is enough for the dough to come completely.
  • Further I make cuts on the dough piece , and put it in the oven for baking - I immediately reduce the temperature to 200 * C
  • Baking according to the scheme:
  • 200 * - 15 minutes
  • 180 * - 10-15 minutes
  • 165 * - until cooked, insert the temperature probe.

Note

The crust is thin and crispy, the crumb is soft and porous!
