Vegetable stew with okra (okra)

Ingredients

Onion
Zucchini
Bell pepper
Canned tomatoes
or tomato juice
Okra
Vegetable oil
(or olive)
Stalk celery
Salt, spices

Cooking method

  • Cut off the stems from the okra, rinse and dry. Pass the onion in a medium saucepan in olive oil until golden brown. Add chopped zucchini, bell pepper, salt, pepper and turmeric. Cook, stirring occasionally for a few minutes. Fill with okra and a few celery stalks (chop). Stir lightly. Then pour in canned tomatoes or tomato juice, stir and reduce the heat. Put a few cloves of garlic in a saucepan, but so that it is easy to pull out later. Cook for another 15-20 minutes, until the okra is no longer bright green.
  • Remove the garlic clove from the pan before serving.

Okra is also dried, pickled, canned. Young green seeds are boiled and consumed as green peas. Ripe roasted seeds are used to prepare a coffee substitute.

The fruits of okra contain a large amount of mucous substances, the thickening and gelling properties of okra are appreciated in cooking. I think what you ask depends on the degree of maturity. I had young pods, they kept their shape perfectly.
