What a bread maker can do

Bread maker Panasonic SD 253

I appeal to all the honey ages and not so "bakers", especially the owners of Pasnas 253.
Recently in M. Video I bought my stove. as the saying goes, "the idiot's dream has come true" (I wanted it for a long time and still bought it).
I decided to bake bread.
it seems like everything, as per the instructions, added yeast, flour, salt, sugar, oil, water and at 4-hour mode everything was baked.
after 4 hours I was in shock when a wet brick fell out.
I decided to bake a second time, and again a brick (although I had previously read about sifting, yeast and drafts)
After that, it became not even just offensive but very sad.
now essentially.
Maybe someone knows, or my hands are doing something wrong, or is it a buggy stove? and it should be carried back to M. Video?
I hope to get advice from more experienced ones,
for example, how to properly fill in the ingredients (maybe you need to mix everything)
in general I hope to get answers and try a couple more times. (otherwise I start sinning not only on myself but also on MVideo, although I understand that Panas should not be buggy
ALL THANKS FOR ANSWERS AND ADVICE !!

Fil, do not be lazy to read herehttps://Mcooker-enn.tomathouse.com/index.php@option=com_smf&Itemid=26&topic=72.0... If you did everything as it is written, then change the yeast (by the way, you did not indicate which yeast you used).
And yet, as has already been said many times, the recipes in the instructions attached to the bread maker are incorrect. Download them from the site https://Mcooker-enn.tomathouse.com/index.php@option=com_content&task=blogcategory&id=14&Itemid=47

As a follow-up to my question, I additionally want to learn how to load ingredients.
i.e. at the beginning of the yeast (whether it is necessary to soak them, for example, Saf-moment)
jee flour, it must be sieved, salt, sugar, dry milk, butter,

Question Do I need to mix it all up? (for example, rotating a spatula or manually) and remove a mound from flour or not?
then pour water, how to pour it at one point or evenly, soaking flour?
Further, do you need to remix all this?
THANKS FOR THE ANSWER

God be with you !!! Do not soak the yeast, dry (for example, Saf-moment) - to the bottom, then sift the flour, lightly knock on the bucket so that there is no slide, then salt, sugar, butter, milk powder and CAREFULLY, so as not to break the flour until yeast water ( can be poured onto a spoon). I pressed the buttons and only satisfy your curiosity - you drop in from time to time and poke your finger (if you want, you can not poke it, I check for stickiness and softness, if the dough is very soft and SLIGHTLY sticky, then the bun will be fluffy) DO NOT MIX ANYTHING IT IS NECESSARY - for this we have bought this miracle of Japanese thought. And as mentioned above - do not look at the recipes in the attached instructions - download from the site

Tell me, is it possible to open the stove while the program is running?
After all, there is no window on Panessonica and
if you open the lid, air can get in, but I heard about the destructive effect of drafts ???
THANK YOU.
Elena Bo
If curiosity gnaws at you, then you can drop in for a while until the baking process has begun. But, as a rule, this is not required.
DuDuc
I look at Panasonic at least 1 time, make sure that everything is mixed normally. On the one hand, curiosity, and on the other, control over recipes that are being made for the first time.

The result is not affected ...

I would like to draw your attention to the fact that all additional ingredients (salt, sugar, milk powder, butter) are best placed in a mold in different corners (so that they do not touch each other) and, which is typical, salt and sugar should be in opposite corners ... In many instructions for bread makers, this is not indicated, but on one of the culinary sites special attention was paid to this issue and was strongly recommended to do just that. I can't say for sure why I should do this, but I suppose that this way all the ingredients are evenly mixed into the dough, and salt and sugar evenly affect it (sugar is fermentation and loosening of the dough, and salt - regulates the work of the yeast). Personally, I always comply with this condition, because it is not particularly burdensome.

Yes, of course you can! For thousands of years bread was kneaded by hand and the air was not a hindrance to it. Here, when standing, a draft is harmful, but a draft does not form if you open the lid for 5 seconds. This is not a biscuit.
Tan-yana
Many people criticize the recipes from the Panas instructions. Given the criticism, I downloaded a bunch of "human" recipes (they are usually already corrected). I advise you to turn to those, since there are enough sites with this information. And use this booklet (instruction) only for technical purposes.

URRAAAAAAAAAAAAAAAAA EARNEDAAAAAA !!!!
in general, I got bread))))
SUPER after two bricks, two beautiful loaves turned out (already baked twice)
Maybe later I'll post pictures of my brainchild))))
it turns out yeast is to blame
originally cla Safmoment, and nothing came of it,
then I bought them, only in another store and baked SUPER breads on this pack.
I have a suggestion for everyone, maybe we will "post" on the site the natural recipes for Panasonic,
as well as your own tricks, etc.
I think that it will be interesting not only for me.
THANKS TO ALL,

Fil, congratulations. And no one doubted what would happen. It's just that sometimes the products let down (although I never did) and it's very offensive the first time.
DyuDyuka_Kiev
My first bread from Panasonic also turned out to be a brick ...

And yeast too ... I took a Saf-moment, but active ... And then I just learned that we needed fast-acting ...

so you are not alone ...

The first loaf was 5-7 cm flat, unmixed flour from the ends, a similar "product" turned out when I put on the timer, the reason was found out quite quickly, the flour was sifted and lay in an even layer without a slide, now, when the stove is working, I do not close the lid until until all the flour is mixed, sometimes you have to help with the rice stick. From my point of view, there should be control over the kneading, the dough sometimes requires correction, add water or flour. An open lid affects the germination of the dough, so do not leave it open for too long.

And with mine - you still need to strive for perfection
Namely - if the unit was called an "automatic mini-bakery", then it is only necessary to approach it before and after the end of the process. Like a washing machine.

I didn't understand, do you understand what is the reason? I am sure that the reason is not the timer. Again, the yeast let you down. Either they were bad or they mixed with water ahead of time (while the bread maker was waiting for the baking to start).
From time to time I put the bread maker on at night, wonderful bread in the morning. There is never anything unmixed.

dough sometimes requires correction, add water or flour.
This again speaks of the benefits of weighing on an electronic scale. If you already know the flour, i.e.you once baked from it, then after weighing, you don't need to add or adjust anything. The quality of the loaf is guaranteed.

I completely agree with you. That's what I do. And I advise everyone.

And yet, firefox, if it's not a secret, what kind of bread maker do you have?

Of course, the timer has nothing to do with it, it's just that in this mode I leveled the flour for the first time and as a result, the flour remained in its "original" form, in other words, be sure to pour it with a slide, then all the flour will be stirred, otherwise it is stirred only in the center (maybe this is a feature just my bread maker? I don't know ...)
The accuracy of the original components must be controlled, it is better on the scales, no one argues here, only the problem with flour, it can be of different quality and grade, and visual control is required here so that the quality of the bread is stable.
Elena Bo
And I always level the flour, I don't like it with a slide, it seems the water can wet the yeast ahead of time. Too thin a layer of flour on the sides. Everything is always mixed with me, there are no problems.
Dentist
I also level flour both in Panas and LG, I have never left the slide (there are no instructions on the slide, so why leave it). Another thing is not to tamp when leveling, that's a fact.

Olga
Good day))
I also have Panas .. I don’t always get bread ... I don’t know why I don’t understand yet, because the first loaf was excellent) but some types of bread (from the book to the stove) are obtained, but I just told the correct recipes .. I will try) ))
Tan-yana
And you try the recipes that are offered on our forum. They are all tested, if someone, something did not work out, then this is all taken into account and the recipe is brought to perfection, provided for general review with the changes made.
Olga
Thank you!)) So now I do) but as they say, a good thought comes apostle and since I don't have patience, as soon as the stove was brought into the house there was IMMEDIATELY mixed and baked white bread) but now I printed out normal recipes and I will definitely follow what others do) well, I will report myself)
Anastasia
Good afternoon to all owners of bread machines in general and Panasonic in particular! I myself was so disappointed when I didn't get the bread in Panasonic as it should. The instructions did indeed give the wrong proportions of the products. Now they have corrected this flaw and published the correct recipes on their website - everything turns out just great for them! I have already tried many of the corrected recipes in practice and just cheered up. Here's a link 🔗

All with the last holiday.
I got a little ill, decided not to go outside, to bake bread.
I almost ran out of white flour, I had to add rye.
The question is, can flour be mixed? and how to change the proportions in recipes? simple interpolation or should there be a certain minimum?
Suggestion to the moderator, let's create a page of "CORRECT" recipes on Panasonic
I hope the "bakers" will support me

So after all, the instructions contain recipes from mixed flour, but at the same time it is indicated there that sourdough is needed for bread made from several types of flour. Here is one recipe I found where beer is used instead of sourdough.
Danish bread with beer
Dry instant yeast 1 tsp
Wheat flour 2 2/3 tsp
Rye flour 3/4 tsp
Salt 1 1/2 tsp
Vegetable oil 1 tbsp. l.
Water 200 ml
Beer 1/2 h
Lyuba
Errors in the instructions for Panasonic are, as far as I could understand, that in some recipes the amount of flour in grams is incorrectly indicated. Better to focus on the number of cups. They have a cup - 240 ml - that's 150 g of flour! And sometimes they say that there is 240 g of flour in a cup. This is not true.It will turn out to be a dry crumbly lump of too steep dough and flour in the corners, then I had to turn off the stove, put the dough in a bowl, add water and then finish everything by hand - knead, put it near a bath with hot water, sculpt loaves and bake in the oven. Then I realized what was the matter, now I boldly try the recipes from the instructions - I translate the cups into grams.
And of course, whenever a recipe is used for the first time (and this is always the case for me, I like to experiment, I have never repeated it yet), be sure to open the lid a little at the beginning of the batch and look to see if there is a bun. If there is flour on the walls and the bun does not "lick" it, then add 2-3 tablespoons of water. But more often the bun rolls up as it should.

The bread has already been baked, It turned out not bad, it's just a pity that I learned the recipe with beer after I loaded the stove,
My oven baked a very good piece of bread.
there is a question for all forum visitors.
Who bakes bread in the oven and how often?
daily or "on holidays" ?? 7
I'm very interested, because I don't bake it often (for example, I didn't go outside in the cold today because I got sick).
I wonder how everyone else
and can anyone calculate how much a loaf of bread is obtained ??
THANKS FOR ANSWERS AND ADVICE

nothing itself needs to be translated from cups to grams and vice versa, if you print out for yourself updated recipes from Panasonic - they finally corrected everything themselves and now the recipes are fully adapted to the Panasonic oven. They lie right here 🔗
These recipes make the bread very good.
Elena Bo
Fil, simple homemade bread (a large roll for Panasonic) costs about 7-10 rubles. depending on the cost of the flour used (electricity included). In any case, it is twice as cheap as the store one. And taste and quality.
And about the frequency of using the bread machine here: https://Mcooker-enn.tomathouse.com/index.php@option=com_smf&Itemid=26&topic=182.new#new

Thank you! I saw these recipes, but I thought it was the same as in the instructions.

I fully support TXT.
We must not help a smart car! Come up with new interesting recipes, that is, get creative with the process.

Anastasia, I looked at the recipes from the Panasonic website and understood what was the matter. It is, as I thought. In those recipes, their infamous wrong grams are simply removed and only the cups are left.
If someone else sees the differences, tell me, maybe I looked inattentively.
Anastasia
Lyuba

No, there are not just references to the amount of flour in grams removed, some recipes have completely different ratios of flour and water. So be careful. At first I also thought that it was only a matter of flour, and when I sat down to correct the recipes with a pencil, I realized that it was easier to print, so some recipes are different.

Hello, my dear pastry bakers!
Immediately I want to express my huge gratitude to the creators of the site.
: flowers: I have been going to home appliance stores for a long time and looked at the bread maker. But if it were not for this site, where I looked quite by accident, I would have gone and watched for probably a long time. But after meeting you, I also became the owner of a bread machine. Today I baked my first bread - the simplest one. But after I pulled it out of the oven, I felt such an all-encompassing joy that I had never experienced, although all my life I have been baking pies and cakes in the oven. Just happiness !!!!!! Kaif !!!!!!
So, colleagues, I will be glad to listen to you and share my own. There is still a problem with all sorts of additives, we do not even have rye flour in the store, but I will get everything, since I am now so excited that I want to try all possible recipes.
Elena Bo
Well done, Bulochka. And if it's not a secret, which one did you buy? Judging by the topic, Panasonic?
rtm65735
Bulochka, I have the same feelings as you! I bake every day, and I just can't stop. The wife is delighted with the bread. Afraid only for the figure.
Bulochka
I bought a Panasonic 253. I tell you that I first read your responses, and what could I buy after that?
I had a second experience with French bread with onions. Sumptuously!!! The buzz continues! They ate bread at a time, some with tea, some with coffee, and some just like that !!!
Recipe: Flour, yeast, salt and butter (took vegetable) - as in the recipe for French bread. I cut two onions and fried in a small amount of vegetable oil, added them directly to the dough, on top of the water, I was afraid to put them in the dispenser, I did not put milk powder (fasting because). I slightly reduced the water. Program - French bread. Delight!
Elena Bo
Bulochka, recipe please in a separate temkoy and in more detail, in grams / cups. Let others try with an onion!
Bulochka
Fried Onion Bread Recipe:
1. Dry yeast - 1 tsp.
2. Wheat flour (using the Metropolitan mill) - 2 1/2 cups
3. Salt - 1 1/4 tsp.
4. Vegetable oil - 1 tbsp. l.
5. Fried onions - fry 2 medium onions for 1 tbsp. l. rast. oils
6 Water 220 ml (slightly less than a whole cup)
Lay in the order listed.
Those who do not observe fasting can add 2 tbsp. l milk powder
To your health!

And besides, the revised manual contains some clarifications. For example, in a recipe for Italian bread, the size of the bread is indicated, and it is not XL, as one might think.
I baked Danish bread very first =) And according to the original instructions. If you let it stand on the wire rack for about 15 minutes after baking, it turns out just super. With curd mass, say =) Cooled much worse, alas

I have been tormented by the question for a long time. Why does the Panasonic 253 have a kneading time of "about 10 minutes" in the "Rye bread" mode? And, for example, mostly -15-30min. It seems to me that rye dough needs to be kneaded longer.
Are they afraid to overload the engine?
Aglo
A crazy thought came to my mind: why the topic was limited to Panasonic om 253. After all, the baked goods in the Panasonic 207 practically do not differ from the baked goods in the Panasonic 253. Moreover, the recipes for the medium and large sizes are almost identical.
There are some differences between the ovens, but they are not so fundamental as to start the branch "Baking bread on Panasonic 207"
I suggest either adding the name or shortening it to "Baking bread on Panasonic".
Boris
But I endured, endured, and I bought Panas-253. I am practicing now. Baked 3 breads: French, Italian and coffee. Everything turned out the first time, just super duper.
But here's the problem. Either I am not catching up, then the instructions from the bread maker are not alle, I do not understand in any way when additives "fall out" from the dispenser into the dough? I never fall out. The dough is kneaded, and everything remains in the dispenser.
Help with advice, plz. I really want bread with raisins.
The dispenser opens only in the mode - BASIC RAISIN BAKING "BAKE RAISING"
Read the manual carefully!
Boris
Yes, I read 50 times, apparently 2 higher educations are not enough to understand this instruction.
why, then, in the recipe for coffee bread there is a "fast" mode and there are raisins in the composition, while it is written "add everything at once, except for raisins." when then add raisins, if not through a dispenser?
Maybe we have different recipes, but there is no coffee raisin bread in fast mode. In the raisin bread mode, there is a chocolate bread recipe and a simple raisin bread.
Anastasia
Here is the recipe I downloaded from this site in the "recipes" section. Here's where and when to put the raisins?

Coffee bread for tea.

Ingredients:

Water - 1 cup and 2 tbsp. lodges (cup 230 ml.)
Wheat flour - 3 cups
Salt - 1 tsp.
Sugar - 3.5 tbsp. lies.
Powdered milk - 2 tbsp. lies.
Butter - 2 tablespoons lies.
Instant coffee - 2 tsp.
Yeast - 2 tsp
Raisins - 0.5 cups (add on signal)

Preparation:
Place the ingredients (except raisins) in the order recommended by the baker's manufacturer. Mode: quick bread, medium crust. Add raisins on a signal, having previously rolled them in flour.

This recipe is averaged by the author of the recipe. You see, it even mentions a signal, according to which it is necessary to throw raisins into the stove, which model 253 does not have (this signal). So if you want this particular bread and with raisins, then throw it in
manual. The dispenser will not help you here, because it is tied specifically to the main bread program and in other programs it will not open.

Vers
The recipe is definitely not Panasonic for bread makers ... Why not first learn the recipes from the attached book and, when you feel what and how, then adapt the recipes offered by the owners of other bread machines?
This recipe is not for Panasonic! In Panasonic, first the free-flowing ingredients, and then the liquid ingredients are added !!!
Boris
Boris
why shout and be so nervous? solid exclamation marks
you can't be so boring! other recipes that I have already tried are also not for Panas, however, everything turned out just fine.
And after reading the site where they constantly write: "the recipes attached to the bread maker cannot be used", I do not want to follow your advice at all.
And the fact that at first they are free-flowing in Panas, somehow I read in the same instructions.
If you carefully read the instructions, then it is not clear from it whether the dispenser is used in fast mode or not.

Anastasia
Thank you
and what other signs should there be? In the recipe section of the accompanying booklet, everything is divided by baking program. In the Panasonic 253 bread maker, the dispenser works only in the "raisin baking" mode. If you are using a despenser, you want to bake bread with raisins, nuts, dried fruits, sausage and cheese ..... Turn on the "raisin baking" mode.
Now it is clear? Dear

Dear vers, we have gathered here to exchange experiences, not whip up passions, and if a person with considerable experience gives you advice with ten exclamation marks, then you need to listen, and not be offended. A !!! - this is for you to pay attention to this, although this is your business.
Elena Bo
Calm, only calm (as Carlson said).
Nobody yelled at anyone.
Every owner of a bread machine knows how to put food in his car. We proceed from this, trying recipes of other stoves. The main thing is not to get confused with the volume of the cups, because they are different in different stoves. And if the recipe is non-standard and you need to put something there, but the dispenser does not trigger, put it manually. Someone on the forum suggested (sorry, I don't remember who) that this should be done at the end of the second batch.
Happy and tasty bread to everyone!
grandma Lyubka
Hello dear audience! Recently, vegetable purees, half-eaten by a child, have begun to be dumped into the dough. The bread has become more aromatic and with a soft crust. And the taste of vegetables is not felt at all. We really like it!
