I baked bread last night according to this recipe, only I took olive oil. It turned out very tasty, the crumb is airy, the crust is delicious. (y) By morning, almost nothing was left. : wow: Today I will bake again !!!

just baked this bread. Freshly squeezed juice is not felt. On my Kenwood BM450, she had little time to bake. I baked on 1 program 3h 05m like a small loaf. the color of the crust is light. For full baking, 20 m was not enough. The bread was sticky and not fully stirred. The kneader did not mix the dough well. And I didn't know how to measure out butter with tablespoons - how much is in grams.

cooked yesterday, very tasty! I replaced fresh juice with tonicity (200g sachet) and raised the juice share to 140ml and reduced water by the same amount. added another 1.5 tbsp. l sugar (more precisely powdered sugar) and 0.5 tbsp. l vanillin. a very tasty bar turned out, or rather a loaf. I would increase the sugar a little more (everyone has a sweet tooth). 530g loaf at the exit.
I had to add 2.5 tbsp during the kneading process. l. flour slightly linden bun.

thanks again !!!!

3h flour, how much is it in grams?
Davli
3h are cups. if I'm not sclerosis 150g = cup
Alxndr
A lot of yeast then? 1h / l for 450g flour?
Davli
Wheat flour (I use the Metropolitan mill) 2 1/2 cups (Panasonic cup - 240 ml. = 150g flour)

when I made this bread, I started from it, everything turned out gorgeous.

in the recipe, judging by the program - the main one and the time is 4 hours - this is Panasonic.

I will add dry. tangerines, so I think to put 1.5 tablespoons of yeast.
Davli
Alxndr I did everything according to the recipe, I added a little flour in the process. because the juice / water changed. very aromatic and tasty. but nevertheless, as a "loaf" I chose another option - here it is called "gastronomic bread" just raised the sweetness in it and added vanillin - it turns out an exact copy of "loaf for tea" or "vanilla loaf".
Alxndr
I baked it ... Of course, I intervened in the recipe specifically. It turned out to be heavy and damp, it was necessary to add flour.

Where else are you suffering? The liquids in the bread are normal!

And wet bread can be from candied fruits, there are many of them and they are wet! The weight of the bread can also be from candied fruits.

This was the "kolobok" after the first batch.

In general, it was so ...
It turns out that the moisture content of candied fruit bread (not dry) is normal. How to remove this "dampness"?

No way! You can try to roll candied fruits in flour before laying, but you have a lot of candied fruits, large slices!
Add flour - the dough will be tight, the roof will crack.

Conclusion: put candied fruits in half and roll in flour before laying.

Try it - maybe it works

There are products from which the dough will always be wet, no matter how much you put them in the dough.
For example, cheese, even a little, on a grater - may give a wet crumb

Thank you, everything is clear.

I made bread (twice) strictly according to the recipe - the bread was tasty and airy. Thank you.

just baked, it turned out delicious, the crumb is wonderful, it will go well with tea, slightly sweetish.

Alxndr in my opinion your bread just didn’t survive. By the number of products you have in the norm. I think here either the products were very cold (or one of the products), or the yeast was bad (of course, I'm more inclined towards this). It is necessary to increase their number or replace them with others. Your dough has not fermented.

Prepared with freshly squeezed juice. We tried it - nothing special, with a bitter taste. But when they smeared boiled condensed milk on it ........ It's just something !!! Perfect bread for her !!! We will bake some more! Thanks for the recipe
