Sourdough bran bread.

Ingredients

rye wallpaper flour 77
white wheat flour 300
wheat bran ( 51
warm water 170
pressed yeast 5 g
vegetable oil 2 tbsp. l. (half a spoonful of sesame and mustard seeds, a spoonful of olive)
salt 1 tsp
whole grain 100% starter culture 170 g (it contains 85 g of flour and 85 g of water)

Cooking method

  • Dissolve yeast and sourdough in water, pour into a bucket. Add bran, then other ingredients except oil.

  • Start kneading in dough mode, after 4 minutes add oil drop by drop and knead for another 10 minutes.

  • Turn off x / n, remove the blade. Form a ball of dough with greased hands, return to cotton. Switch on the Dough mode.

  • At the end of the program (1.5 hours), place the dough on the table, form 1 or 2 loaves, rectangular, round or oval, depending on the shape. Place on baking paper in a mold (s) and leave under a towel for 45 minutes.


  • Half an hour before the end of the proofing, turn on the oven at full power. Baking oven with steam or in a mold with a lid: for 1 loaf 30 min under a lid at 240C and another 20 min at 220 without a lid. For 2 small loaves, 15 min each, covered and uncovered.


  • I got the impression that my sourdough for this recipe is too active and it was necessary to add either 2 times less yeast, or not add at all. The top broke even before baking, despite reducing the first proofing to 1 hour and cutting the bread 15 minutes before baking.
