Ingredients

Dough:
Wheat flour 500 g
Warm water 275 ml
Fresh yeast 18 g
Sugar 1 tsp
Salt 1 tsp

Filling:
Brynza 200 g
Homemade dry cottage cheese 250 g
Cheese (preferably not salted) 200 g
Wheat flour 1 tbsp. l.
Egg 1 PC.
Green onions 1 bundle
Fresh basil 10 leaves
Garlic 2 tooth.
Ground black pepper (taste)

Cooking method

  • Stir yeast with 1 hour. l. sugar, 1st. l. water and 1 st. l. flour. Put in a warm place and leave for 10 minutes.
  • Pour warm water into a bucket of HP, rast. butter, add flour, salt, make a depression in the middle, pour out the yeast. Knead the dough on any program without heating (dumplings, muffins, etc.). As soon as the dough is kneaded, turn off the HP and take out the dough. The dough is pretty steep.

  • Get the dough out, knead. Divide into 4 balls, cover with a towel and leave for another 20 minutes.
  • Roll each ball into a circle with a diameter of ~ 30cm. Put 1/4 of the filling on one side, cover with the other side and pinch. Cover with a towel and leave to rise for 20 minutes.
  • Brush with an egg before baking, sprinkle with sesame seeds. Bake in an oven preheated to 200C until golden brown.

The pie, I would say, is very harmonious, the spicy rich filling is very consistent with the light simple taste of the dough. In the oven it was ready in 20 minutes. Unfortunately, I didn't have the basil, and it's bad that I arbitrarily added an extra clove of garlic - but it's still very tasty! Even our little one, very difficult to feed, asked for a supplement. Not even five years have passed since the date of the publication of the pie - and finally THANK YOU for it to our Ksyusha!
