The bread turned out to be very tender, I didn't expect it myself ... because I decided to just experiment. The only thing - we need your hint, the bread turned out to be slightly uneven, what is the mistake ... in the amount of water?

it turned out something like this:
630-650 gr wheat flour
300 ml of liquid (in my case, whey, homemade yogurt (standing), slightly sour cream 18% and fresh milk 2.5%)
100 grams of cottage cheese with kefir (I add homemade cottage cheese to homemade kefir and give this almost liquid mixture to the child for the second dinner.It turns out cottage cheese two or three times less than kefir)
60 gr butter
2 tbsp. l. Sahara
1.5 tsp. salt
1.75 tsp yeast
basic mode, 1 kg, dark crust
I went too far with the curd-kefir liquid, so it turned out so much flour (in the process of mixing I added ...)
surprisingly, the bread turned out to be wonderful - and rose well (and even higher than the roof - there’s a bit too much flour ...), and baked, and very tender and airy. the only thing is that I didn't feel the cottage cheese!
everything is understandable, of course - there is very little of it (cottage cheese), and it does not have a particularly pronounced taste, since it is homemade ...
but still the experiment turned out positive

I also had a successful experiment with cottage cheese. In recipe bread with yoghurt, I replaced it with Activia curd. There was no yogurt at home ... It rose well, baked, but the taste of cottage cheese was not felt.

If you crumble the Adyghe and mix in a blender (in a bowl), with cream (22%), you just get a wonderful cream cheese, you can add dry herbs and garlic or any other filler. I can't tell you the ratio of cheese and cream by eye. The fat content of cream is better than 22%, since 33% or whipping cream is not suitable, they contain additives that turn them into flakes with prolonged whipping.

Brown is a wonderful blender - I have the same one (submersible + two bowls with knives), everything will work out, just take the bowl deeper. I start kneading at 2 speeds and by the end, when the mass is completely homogeneous, I turn on Turbo for a short time.
And tomorrow I will bake such bread, I will try it with the Adyghe, otherwise now the stove is occupied with yoghurt (cherry) with buckwheat flakes in baked milk.

Perhaps this recipe is not very suitable here. I took as a basis the recipe for bread with yogurt from the instructions, as well as Zhorzhevna and changed:

1 3/4 tsp yeast
300 gr flour
100 gr buckwheat flakes
1.5 yoghurt (Miracle Bio 125 g each)
1.5 tsp salt
2 tbsp sugar
200 ml baked milk

I controlled the batch, I had to add more milk, just did not count how many spoons (1 tbsp = 18 ml). I think the milk can be increased to 250 ml. DIET mode for whole grain flour 5 hours, size L, my crust is not exposed in this mode. The top is light and the sides are darkish because of buckwheat. In general, I often add baked milk to the usual basic recipe instead of water to taste

Or pour into a multicooker overnight on the Heating mode. or, if this unit is not yet available, then boil milk in a saucepan and pour it boiled into a thermos. Twist it tightly and leave it overnight too. Pour out the contents in the morning. If it is beige-pink in color and smells incredible, then everything is fine! I can also add that when I tried to put the market whole (unseparated) in a thermos, the store in the pack seemed to me a pitiful resemblance to a real product.
