Cooking method

  • Recipe for. Wash the jars, put tomatoes in them, pour boiling water over them, let stand for 10-15 minutes. Then drain this water, put sugar, salt, bay leaf, cloves, peppercorns in jars, pour new boiling water and add 9% vinegar. Roll up the banks. There is no need to sterilize, just turn and wrap.
  • This time I made 1.5 liter and liter cans, in the first I put 3 tbsp. l sugar, 1 tbsp. l salt and half a tablespoon of vinegar, and in 1 liter - 2 tablespoons - sugar, salt 0.75 tbsp. l, and 0.25 st. l vinegar. All measures are measured false from HP.

So: on the bottom of the jar I cut the garlic coarsely, put a piece of dill umbrella, a sprig of parsley, a sprig of celery and always a sprig or two of basil. Next, I put the tomatoes to the top. Brine (fits a 3 liter jar):
for 6 glasses of water
3 table. tablespoons of sugar
5 tea. tablespoons of salt
3 bay leaves
2-3 cloves
peppercorns
after boiling, add 80 g of vinegar 9%.

And then - in the same order: first, pour boiling water, leave for 10 minutes. At this time, the brine is already boiling. I pour out the water without any pity and immediately fill it with brine, roll it up with a sterile lid, wrap it up and leave it to cool completely. Not a single jar has ever "ripped", and the taste of tomato and brine is perfect. I keep jars in my apartment, on the mezzanine.
