Curd casserole without flour and semolina

Ingredients

cottage cheese 500gr.
eggs 4-5pcs.
sugar 2/3 cup
butter 30gr.
vanillin
dried apricots
raisins
additionally:
butter for mold lubrication
sweet ground crackers

Cooking method

  • To sprinkle the baking dish, I use crushed buns from a sweet bun - this gives the finished casserole a great crust and flavor. If you like the croutons, then try to fry the cheese cakes, which should be rolled in such croutons instead of flour - it will just taste great.
  • Cottage cheese can be whipped with a blender or minced - it's just a matter of taste. Sometimes we want a homogeneous casserole, but more often - with grains of cottage cheese. So it does not matter what the fat content of the cottage cheese. If the cottage cheese is fat-free, then you can flavor it with butter. I only buy homemade cottage cheese, and I like it not to have excess whey.
  • I hand mix the cottage cheese with eggs, sugar, pieces of butter, vanilla. Then I add raisins, dried apricots pieces and mix again.
  • Grease a baking dish (I have a glass one) generously with butter and sprinkle with breadcrumbs. Pour the curd mass into a mold. If there are crackers left, then do not hesitate, sprinkle them on top. If you like, then on top of the mass lay out small biscuit biscuits soaked slightly in milk.
  • Bake the casserole at an average temperature (150 - 160 *) for 30 minutes. Then I turn off the oven, but I don't get the casserole for about 5 minutes.
  • In the photo, the casserole is only from the oven, it is made from low-fat cottage cheese, with butter, 5 eggs, there are no croutons left on the top. Honestly, I put everything by sight, based on what is in the refrigerator, this does not affect the baking result even a single gram.
  • If you also do not like curd casseroles with semolina, flour, etc., then try my recipe. The casserole will be very juicy, soft and will not fall off after baking and cooling.

You know, it's a matter of chance that I gave this recipe. Today I have free time, and I looked through the recipes on our forum. I noticed that all the recipes for cottage cheese casseroles with "thickeners", so I decided to add my own, for a change. At my house they don't eat with semolina, flour, etc., only very rarely, with corn flour.

I bake in a glass low saucepan, about 20 cm in diameter. And this one in the photo, I baked in a glass salad bowl with a slightly larger diameter.

Do not forget that there is no flour here, and the cottage cheese heats up during baking and becomes very soft, therefore the casserole, immediately after baking, even has a soft center. Then it will stand and grab, and when it cools down, so, in general, it becomes solid. Like cheesecake ...

I strongly advise, next time (well, if, of course, you will do it) grease the bottom with oil and sprinkle with breadcrumbs - this will give the crust color too. I also have a lot of silicone molds, but I bake in glass so that more breadcrumbs will stick.

I haven’t cooked this casserole yet, only today I saw the recipe, and I’ll put in my five cents)): it won’t go up too much, because there is no yeast or soda, this is my opinion. But in a silicone mold, not all baked goods work for me! If something dry, such as biscuits or muffins, is excellent, but onion pie (a layer of shortcrust pastry below, a lot of fried onions on top) does not work: the dough is not a dry cake, but a slimy mass, I would say so. Try not in silicone (although, I always made curd in it, but ... you can try it))
