Armenian gata

Ingredients

Dough
flour 3 glasses
kefir 1 glass
egg 1 PC
margarine 250 g
vinegar quenched soda ¾ h. Spoons
Filling
flour 2 glasses
sugar 1 glass
Butter 250 g
vanilla sugar 1 sachet

Cooking method

  • Recipe from Lyubov Pasechnaya
  • 1 glass = 250 ml
  • Mix flour, salt and soda, add margarine, egg, kefir, knead the dough. Divide the dough into three parts and place in the refrigerator for 30 minutes.
  • During this time, prepare the filling. Melt the butter, (I did not melt it, I liked it that way, I baked it twice for comparison), add sugar, mix everything and add flour little by little. Mix everything until crumbs form, divide this filling into three parts.
  • Roll out the dough in a thin layer, put the filling on it and smooth over the entire surface. I still dangled nuts, I have them there too
  • Roll up, brush over the top with a beaten egg. Make strips with a fork to the full length. And cut diagonally into large pieces (7-8cm)
  • Put on a baking sheet, on pastry paper and put in a preheated oven to bake for 40-60 minutes at a temperature of 200 degrees (each oven has its own time). Until a good golden color. Delicious!

Note

Gata - round sweet flatbread with toasted flour filling; traditional confection of Armenian cuisine.

And you can also go there raisins or dried cranberries ...... I dragged the recipe into the piggy bank. My family has a lot of respect for different cookies.

celfh... it would be good to cut such a gata with a corrugated knife. It turns out very nicely.
Thanks for reminding me, I'll do it somehow. In her youth, she baked when she lived in the Caucasus, where this pastry is very popular. And I lost the recipe.

celfh, delicious cookies!
Oh, and I bake almost the same I often bake, is in great demand among eaters And thoughts, as usual, converge over the horizon ...
My version is slightly less bold. Add if you don't mind? There is no point in a separate topic, it's just a slightly excellent option

Dough
3 tbsp. flour
180-200 gr plums. butter - cold or frozen
1 p. Baking powder
salt
1 tbsp. sour milk
1 egg
Flour + butter - into crumbs using a grinder. Do not knead the dough for a long time, collect in a lump - and that's enough.

Filling
1.5 tbsp. Sahara
1 tbsp. flour
1 pt vanilla sugar
50 gr plums. butter - melted

celfh, and what margarine should be for the test?
Sorry, I'm a little late to answer: like I went on vacation, already for a week. I usually take the margarine. From the refrigerator.

It turns out that you need to grate margarine? And how, roll out the dough thinly?
celfh
I cut the margarine, how it goes, I didn't even remember about the grater, but it can be done on the grater. And I roll it out quite thinly, but not to the state of tissue paper, well, maybe 0.5-0.7 cm.

celfh! Thank you so much for such a delicious recipe! Now he is the favorite of my family, and if in my kitchen rush about the arrival of guests, then Gata always helps out. And the taste and aroma, which in the end cannot be conveyed. Rarely from any recipes, as a hostess, I received such moral satisfaction as from baking Gata. Thanks again for the recipe !!!!
celfh
luda_smol , thanks for the tip! I am very, very glad that you and your guests like Gata. You should have it in general wonderful, Nuts of your own, local, always fresh

Tanya! A very decent recipe! And very tasty. If you don't mind, I'll put my own version, maybe someone wants to try it out. But, in principle, gata - it is gata, only you can modify the dough depending on the availability of products.
For the test:
Flour - 200 gr
Butter - 100 gr (I replaced butter and margarine in half)
Sour cream - 100 gr
Baking powder - 1 tsp
Egg white - 2 pieces
Yolk - 1 pc
A pinch of salt
For filling:
Sugar - 100 gr.
Butter - 100 gr.
Flour - 100 gr.
Vanilla sugar - 10 gr

Someone asked what kind of dough it turns out, and so, it turns out exactly puff - shortbread, more like puff
That's what I did:

the author of the topic senks for a tasty treat!
Did exactly as in a hat.
only here with salt a little hitch did not come out. it is not in the recipe, but in the description it is.
he poured half a teaspoon into the eye - it seemed to hit!
due to my morning cooking gata there was a brunch (took the kitchen for an hour and a half).
which led to dissatisfied views from the wife.
with coffee, however, a slice of almost hot gata that she ate resulted in a noticeable boost in mood.
and at lunchtime - a piece again!
so cold gata, I'll tell you, it's not warm for you!
it turned out to be much tastier!
thanks again!

Who is it easy for? Do you think I don't want to?

If the flour is heated in a frying pan with a thick bottom to a slightly creamy color, stirring constantly, it will be much tastier. The flour will take on a nutty flavor. Will not give off dampness. But without burning, of course.

I'll take it as a bookmark, the cookies look very appetizing. There will be time, I will definitely prepare and share my impressions. Thank you!

celfh, Tatyana, thanks for the recipe!
I haven't tried such pastries before, but I sensed that I would like it, and it happened)
And och is convenient: a lot and satisfying, enough for a long time.
however, it got muddled with the filling: it turned out to be the consistency of plasticine, but was reluctant to smear it.
there was a thought to add flour, but I did not want to lose the sweetness, there it was just in moderation, I was afraid that it would be hard.
I even forgot about the nuts, did not add

Tanya, why should we separate it? Something I did not understand from the recipe.
I was very interested in this recipe. I will definitely try.

Yes, the dough should be such that it could be rolled out without problems.
Quote: gala10
Tanya, why should we separate it?
Gal, because recipes need to be written more carefully)))
Divide the dough into three parts and twist three rolls))) Naturally, and the filling is divided into three parts))

Only I did not extinguish the soda with vinegar, because I considered that there was enough kefir.
Yummy!

I really like the purchased Gata. And homemade is a hundred times better after all! I will definitely do it, especially since the kefirchik can be attached.
