Salted tomatoes (as from a barrel

Ingredients

Dill
Currant leaves
Bitter red pepper
Celery
Tomatoes
Water
Salt
Make
Water 0,5 l
Bay leaf 10-15 pcs.
Carnation 5-6 pcs.
Allspice 30 pcs.

Cooking method

  • At the bottom of the can (preferably with a wide neck), and I have a ceramic 5-liter barrel, lay the dill with inflorescences, a few currant leaves, bitter red pepper, a little celery. Place prepared tomatoes. Add clean, non-chlorinated water, after stirring salt in it. Based on 3 liters of water 2 tbsp. tablespoons of salt.
  • Boil the marinade for 5 minutes. Cool, pour into tomatoes. Eating immediately is not recommended. Storage readiness:
  • in a cold place after 35-45 days
  • at room temperature -20 days.

Note

Many of you love salty tomatoes when the juice plays under the skin and the flavor is awesome. And I love them. Until I had this recipe, I went to the market, bought barrel tomatoes from grandmothers, and immediately, without leaving the checkout, took a sample.

I'd like to make such tomatoes, but ..... it is not clear In 3 liters of water 2 tbsp. l. pour salt over the tomatoes and then another marinade, but it just doesn't fit into the container, or something I didn't understand
celfh explain, we just love these tomatoes from the barrel

Yes, everything fits. There is only 0.5 liters of very rich marinade
But don't boil all the water. I mix spring water with salt and pour tomatoes. And I boil the "small" marinade with spices. Basically, you can cool a small marinade, mix it with water and salt, and pour over the tomatoes. As they wrote this recipe for me twenty years ago, this is what I do without thinking at all.

Thank you Celfh: flowers: I poured everything down, boom wait 20 days, put the bucket on the balcony, and should the water be almost not salty?

If you took at the rate of 2 tablespoons per 3 liters of water, then salt is quite enough.
I think it's also hot in Ramenskoye, maybe you shouldn't keep it on the balcony? Room temperature, in my opinion, is 20-22 degrees.

It seems to me that the salt is too low. Maybe I'm wrong.
