I also decided to completely abandon any yeast, I bake bread with three leavens - eternal from Luka, lactic acid from Admin and from wheat flour, in turn, alternating wheat-rye, rye and wheat bread. The result is always impressive, even though my starters are pretty lazy. For some reason, wheat flour sourdough works best of all, despite the fact that the flour is refined, premium quality, just flour and an equal volume of water. The bread is not sour, very fluffy, but not weightless, with uniform holes, elastic and very tasty. Now I want to try putting in less sugar than in the basic recipe, otherwise it turns out to be a little dessert. The only drawback of sourdough is that the bread comes up more slowly than with yeast. I set the dough kneading mode, then it takes 2-3 hours (I am watching this) and when it comes almost to the edge of the bucket, I put it on the baking. The taste is fundamentally different from yeast bread and does not smell like yeast.
The recipe is simple white bread for x \ n Binatone, but I tried different ones, both French and chocolate, etc., just this one is the most delicious. I would like to try to make a sourdough dough ...

I baked a lot of buns and breads in KhP on kefir-wheat sourdough and I can say that adding such a sourdough from 50 to 200 ml per 1 loaf turns any bread into a butter-kulichny bread.

I did the usual simple one, without sugar, only on one sourdough (Lyudmila's recipe from LJ). I made half of the portion this time, because my big rugs do not have time to eat. Better to bake a new one. This time baked in a cake pan. Due to the lack of proofing baskets, I have repeatedly had an emergency - a linen napkin, despite being rubbed with flour, stuck to the bread. There are no such problems with the mold. With a flash, it is difficult to convey the porosity of the bread and the small-hole lace crumb. When proofing, it rises three times.
