Ingredients

Dough:
Wheat flour 600 g
Water

Filling:
Poppy 250 g
Sugar 100 g
Melted butter 2 tbsp. l.
Vanilla sugar taste
Nuts (I have almonds) 50 g
Raisins 50 g
Egg 1 PC.

Cooking method

The dough is prepared in a safe way. All ingredients are mixed, the dough is kneaded until smooth. I advise you not to add all the water at once, leave a little, it is better to add as needed. Water should be taken warm, well warm, but not hot!
Now the dough needs to be fermented for 1 hour at 35-40 degrees. I do this in the oven. I close the bowl with the dough with a foil and put it in the oven for convection with a temperature of 40 degrees. Wrinkle and ferment for half an hour.

The filling is also not so difficult.

Pour poppy seeds with boiling water for 3 minutes.
Then fold into a fine sieve and let the water drain.
If you take almonds, remove the skin, pour boiling water over the nuts and let them stand.
Soak the raisins in a tablespoon of rum (cognac, brandy).
The poppy was always minced several times. I got used to doing this with a blender.
We mix everything (except raisins) and drive in a blender. Poppy seeds are broken, checked.
The egg is added so that the filling keeps its shape and does not fall out when cutting pieces of the finished roll.
Now you can add the raisins.
Divide the dough into two equal parts.
Roll out into a rectangle. The thickness of the dough on one side (from which we will start rolling the roll) should be less than on the other.
Now you can lay out half of the filling and distribute evenly over the dough.
After that, grease the edges of the dough with an egg beaten with a tablespoon of water.
Fold the edges that will be the sides of the roll by two cm.
Now once again spread the folded edges with an egg and roll into a roll.
Place on a greased baking sheet, seam side down.
Do the same operations with the second roll.
Now put the rolls for proofing. Take your time here. They will part for at least an hour.
After that, grease them with the same egg, pierce them with a toothpick in several places.

Time for preparing:

about 35-40 minutes

Cooking program:

bake at 180-200 degrees.
