Your "clumsy" eclairs will go perfectly into the cake. Under a layer of sour cream, you still can't see a nifig and in general it doesn't matter whether they are in the correct shape or not. Reduce the temperature when you see that the products have begun to tint.

And you "measure" your glass not with flour, but with water on the scales. Reset to zero when you put down the glass and add water. And even in a standard teacup, you can squeeze not 160 g of flour, but more if tamped.

Why should you measure flour in grams in this recipe? After all, the recipe contains 1 glass of water + 1 glass of flour + 100g of oil.
I pour and pour the water-flour in the same cup (a cup of flour "under the knife"). And then when the dough is brewed and cooled down, I add the eggs to the desired thickness. I always use this recipe and it always turns out great.
It reminds of the principle of a kolobok in a bucket: you put in the ingredients and then by adding flour you regulate the kolobok.
And in the "finger" you make the dough, and then you adjust the density with eggs. For example, yesterday I had to add 11 eggs instead of 4 + 4 eggs to a double portion of dough. Something like this...

And those that lagged behind in the rise, only later (with an increase in temperature) did not rise. And you need to remove them from the baking sheet immediately (as you advised), otherwise they have stuck to me a little and sagged. But these are trifles. The cake is very tasty, easy to make.
