Ingredients

Wheat flour 600 g
Oat flour 50 g
Sour milk (or kefir) 300 ml
Malt 2 tbsp. l.
Water (hot for malt) 175 ml
Salt 2 tsp
Honey 1 tbsp. l.
Rast. oil 2 tbsp. l.
Dry yeast 1 tsp
Semolina 50 g
Peeled sunflower seeds 70 g
Caraway 3 tbsp. l.
Embroidery (bran) 3 tbsp. l.

Cooking method

  • Output - 1 kg 300 g
  • Pour (stirring) the malt with boiling water. Then we load everything according to the list. Pre-fry seeds, caraway seeds and bran (lightly) in a pan and whistle.

Cooking program:

Mode is French bread, medium crust.

Probably delicious. The recipe is too big, probably 1.5 kg? I'll count it to 750 g, maybe I'll bake it today, I've been thinking about something unusual for a long time.

There is never too much caraway with malt and honey. Good luck!
And the loaf came out at 1 kg 300 gr, it doesn't cost less, it leaves quickly.

The crust is thin, crispy, and the inside is soft and smells like malt
I want to try making small buns or baguettes according to this recipe so that everyone has enough crust

I bake in the usual mode, for some reason in my Moulinex I did not feel the difference between the standard mode and French bread.

She made bread like Elena's. I used dry fermented malt. No cumin added. In Panasonic 2502 I put a dark crust in size L, but next time I will get a medium crust, since the bread turned out to be very fried. Thanks for the recipe
