  • Dough:
  • 800 gr. flour
  • 200 gr. draining. oils
  • 200 gr. sahara
  • 40 gr. brewer's yeast
  • 4 eggs
  • 4 yolks
  • 160 g candied orange fruits (you can replace 200 gr.almonds or 200 gr.raisins)
  • peel of 1 lemon (grate)
  • peel of 1 orange (grate)
  • 1-2 tbsp. l salt without top (who likes more)
  • milk for kneading
  • Glaze:
  • 4 squirrels
  • 200 gr. sahara
  • 50 gr. peeled almonds
  • granulated sugar
  • Procedure:
  • Dissolve yeast in a little milk and knead the dough from 60 gr. flour.
  • Leave to rise for 1 hour.
  • Add a little water and 100 gr. To the dough. flour and again leave to rise for 1 hour.
  • Add eggs, yolks, sugar, salt, remaining flour, butter at room temperature, cut into pieces to the resulting dough.
  • Knead well to get an elastic dough.
  • Then add the grated peel and candied fruits / almonds / raisins. Mix everything well.
  • Put the dough into molds (we use cruciform ones) and leave to rise for 8 hours in a warm place.
  • Put the cakes in a preheated oven, start baking at 180 ° С and after 10 minutes reduce to 160 ° С and bake for another 40 minutes.
  • Prepare the glaze by whisking the sugar with the whites and using a brush to cover the surface of the cake. Sprinkle with granulated sugar and lay out the almonds. Wait 10 minutes until the crust is beige and the Colomba is ready. Attention, watch the temperature if the oven is not standard. The cake should rise and turn brown!

Note

From this test, 2 Colombs are obtained, or you can make them in the form of Easter cakes. Very pleasant dough, aromatic.
