tanya1962, do you make coffee in a Turk? please tell me how to make delicious coffee

Elena74 I cook this way in a Turk pour 100 ml of coffee 2 teaspoons with a slide, pour hot water and put on a small fire. You need to remove the coffee when brown foam appears. Carefully remove the froth and put it in a cup, then carefully pour in the coffee. Do not bring coffee to a boil. I don’t put sugar, if you like with sugar, put it right in the place with coffee in the Turk. I do not like any additives in coffee, neither cinnamon, nor cardamom, etc. I think the taste of coffee is killed, but this is just my opinion.

I have the strongest relationship with coffee)) I don't like Bodyazhechka.
I went and measured the volume of the Turks. Approx. 350 ml.

Done!

My old Soviet Turk contains 250 ml of water up to the waist.
4 teaspoons of coffee, 2 teaspoons of sugar, fine sea salt on the tip of a knife, just a few grains.
I'll make a reservation right away that I do not pretend that my method is correct, unique, or the best. I just cook like that and I like the result.
It is better to use filtered water or, at least, settled.
If the water is from the tap, you can throw in the small clove whole. Garlic will take all the nasty things. I did this repeatedly, coffee does not smell like garlic.

1. I pour coffee, sugar, salt into the Turk, stir.
2. Pour water halfway.
3. I wait patiently until a crust appears on top.
4. Stir, add water again.
5. I repeat the procedure with adding water two more times.

, honey, is it possible to put salt in coffee ??? I am asking not because it struck me with novelty, but because I heard not very good about this method ... I do not want to advertise it live.

I, of course, am not Frau, and I have never added salt to coffee in my life.

But somewhere I read, or on TV I heard that salt emphasizes the sweetness and taste of the original product, which allows you to reduce the amount of sugar to a minimum.
And I myself drink coffee completely without sugar, or I literally add a teaspoon on the spout.

And our Little Star will come and tell you where her dog rummaged with salt
Stern
Girls, for me salt in coffee, like vinegar in jellied meat, is a flavor enhancer.
The main thing here is not to overdo it. Add a little drop, purely symbolic.

I also drink coffee without sugar from electric coffee makers, but I can't drink coffee from a geyser coffee maker and from a Turkish coffee - it tastes bad without sugar.

Milanese coffee

For 1 serving:

1 tsp ground coffee, 1 tsp. cocoa, 80 ml. water, cream / sugar - to taste and at will (I get along without that, and without the other, I tastier "without anything"!)

Brew a drink in a Turk from a mixture of ground coffee and cocoa, do not boil! Add cream before serving. Sugar (best of all cane lump) serve separately.

It also goes well in the mood
Italian coffee

For 1 serving:

1-2 tsp coffee
100 ml. milk
sugar to taste and as desired

Make coffee with milk in a Turk (do not add water!). Let stand and strain into a cup. Serve sugar separately.

Keelingji or nigella
The seeds of a plant (flower) usually called nigella due to their complete resemblance to poppy (in appearance). They have a strawberry aroma and are used to add a strawberry aroma to a dish or confectionery. Nigella is a flavoring agent used in jellies, mousses, compotes and ice cream.

Crochet, thanks for the coffee, of course I would like to know new recipes coffee. I also like to add to coffee (for a coffee cup - 2 teaspoons of ground coffee) everything on the tip of a knife - salt, sugar, vanilla sugar mixed with cinnamon, ground black pepper. I also like the taste of coffee made in a Turk best of all, but I'm lazy.

Since this topic has gone, I am sharing our favorite recipe.

We have a Turkish 0.5, because my husband is a big coffee consumer.
If you do it according to the long option (pouring cold water, as expected), then it turns out tastier. But often in the morning we preheat the water in an electric kettle.

So, coffee with cinnamon and pepper
For our volume, the Turks "to the neck":

Coffee (depending on the quality of coffee and mood) 5-6 tsp. with a small slide
Cinnamon 2-4 "pouring out" from a jar for seasoning with holes (never measured in spoons and grams)
Black pepper - 4-5 peas (I tried it with ground, but here you have to be very careful, if you don't want to get absolutely fiery swill).
To soften the water, you can add a little salt, but for me, this is not very hard for us.

In the process, I constantly stir and periodically remove the foam with a spoon in my husband's cup (well, or guests - I myself do not drink coffee temporarily). When just a hint of boiling - shoot. I pour it into the cup carefully on a spoon, so as not to beat the foam, and it turns out black aromatic coffee with a beautiful foam. The husband drinks black without sugar, but if with cream and sugar - it's also delicious.

CrochetThanks for the Italian morning coffee !!! So tasty, I did not expect ... I heard that it is possible with milk, but what would be in milk ... in short, TASTY, we will cook like that !!!

Peace be with you bakers!
Here, in my opinion, it turns out deliciously:

Put a spoonful of granulated sugar on the bottom of the Turks and over the fire. When the sugar starts to caramelize (turn brown), pour water into the Turk and bring to a boil. After removing from the heat, pour in / according to your taste / finely ground coffee, put it on the fire again and after boiling, serve it to the table. who is not sweet, you can still plump sugar
I also like to add salt \ sea salt - literally heels of crystals \ and sometimes a little cinnamon just not powder but a piece not ground

Tiny, I bought caramel essence in Peki, along with others.

Maybe in coffee it will do if you drop a drop?
It’s really delicious for me without essence and sugar

And I cooked it in milk 2 times, for some reason it didn't work - it was too thick and ... sour, although neither the milk sour, nor the coffee (different varieties) was initially sour ...
Ruru
Now, when brewing, I add 3-4 ripe cherries pounded in sugar. An amazing combination, it is important not to overdo it with the berry, especially if it is sour.

Somehow I don't perceive the essence, I like everything to be natural ... My husband somehow tried to add the essence of Mocha to coffee, it didn't go, I didn't like it at all, but here it tastes and color, as they say ...
I, too, without sugar, awesomely delicious, coffee with sugar ceases to exist for me, but this is IMHO)) ...

I somehow cooked it by 1.5%, I was also "thick" (too rich and fatty), and by 0.5% it seemed to be nothing, though I dilute it with water, in half, and add a few crystals of coarse sea salt, this is sacred ... But I don't know about "sour" ...honestly, I never noticed ... Again, apparently a matter of taste ...

Krosh is not fussy, just the taste of sugar clogs the coffee, I also cannot drink with sugar, I only drink black and without sugar.
Alexandra
Tiny,

I cooked 0.5% in a house in the village - I didn't guess to dilute it with water, but threw a couple of crystals of coarse salt.
The first time I brewed it on a real Turkish Mehmet Effendi, the second - on an espresso bought in Ikea. Both coffees were tested in Mukka as espresso, Turkish coffee is also not sour in the Turk. I tasted milk both times - not sour. And the general taste of the drink is sour, but I don't understand coffee with sourness at all

Anyway. Milk is still not very useful for me, I will drink black coffee, as before.

I agree with the essences. And here recently a trainer from Greece brought me a little chocolate coffee beans - the Greeks do not grow coffee, but for themselves they fry and flavor it with natural oils and essences. That's how we are not lovers of flavored coffee - and this one was delicious. Just for fun I bought some Montana Bavarian chocolate coffee. Well, what disgusting ... the cheapest roasted coffee, apparently, is allowed for aromatization, trying to disguise
Crochet
Alexandra
I also brewed my favorite Lavazza for the first time on the DVD, the second time, like you, IKEEV espresso ...
Oh,Alexanderchka, a tremendous thank you for saving me from an unreasonable act, I have been looking in the direction of Montana Bavarian chocolate for a long time ... although I cannot explain why it is to me (I do not understand the taste of flavored coffee), probably the name is mesmerizing ...

Girls, maybe someone can explain a phenomenon that is not entirely clear to me ... Twice I curdled coffee with milk, the milk was not sour (absolutely sure), the Turk and the spoon were clean (I give a grudge), but nevertheless the coffee curled up. ..that is, when I cooked everything was fine, I left it to brew for a few minutes and here it is for you ... Both times the milk was different ... And what is interesting, after the coffee, I cooked cocoa for my daughter with the same milk. curled up ... Who can tell where the dog is buried?

Crochet, I think it is in the acidic environment of coffee (Ph - the number of coffee is lower than that of cocoa), so milk curdled with coffee, but not with cocoa.

Helen, I don't understand why this does not happen periodically then? Well, it would be curtailed every time or something ... The day before yesterday, it was so funny at all, coffee with milk turned out only the third time (the two previous portions had to be poured out, curled up). Milk is the same package, coffee is also one, the Turk is thoroughly washed after each time ... well, that's what it is, eh?

Sternochka,

I do it according to your recipe, adding water twice ... with a couple of coarse salt crystals and, of course, without sugar. It's a pity that the 220ml turbo is too much. For 4 cups it turns out. And if a half portion of the foam is worse because of the shape of the turtle. But there was no less such a form.

By the way, the cupcake is also based on your recipe, lemon. It was not possible to try - I wore it "to people" last night, ate late for me. Praised

Vacuum packed coffee should be kept tightly closed in the refrigerator, and the supply of beans should be kept in the freezer.
By the way, I do that too.
