Bread with fish, bran and sweet pepper.

Ingredients

Wheat flour 2 1/2 cups
Bran (took rye) 1/2 cup
Water 280 ml
Salt 1 1/2 tsp
Sugar 1 1/2 tsp
Vegetable oil (I put mustard oil) 1 1/2 tbsp. l.
Dry yeast 1 1/4 tsp
Gluten
(it is possible without it, but I have, why not add?)
1 tbsp. l.
Powdered milk 2 tsp
Sweet pepper, different colors 100 g
Smoked horse mackerel 75 g
One onion

Cooking method

  • Chopped onion and fried until golden brown. I cut the horse mackerel into small pieces, having previously disassembled it. I cut the pepper into cubes. I loaded everything into a bucket. Then I remembered that a glass of 240 ml was indicated in the recipe for bread with bran, and I had 230, I added 1 tbsp during the kneading process. l. flour and bran. (I think that you could have added a little more, the roof has slightly sat down, or there is less water, I forget all the time about the difference in glasses)
  • Bread with fish, bran and sweet pepper.

Cooking program:

Basic mode, medium loaf, medium crust.

Once I leafed through all my books of recipes for baking bread. I wanted something that hadn’t been there yet, but to eat for sure. In the book of recipes for the oven Tefal found a recipe for bread with smoked salmon and leeks. There was no leek in the house, but the salmon remained just out of work (it turned out to be very salty, and my salty ones do not pamper with their attention). I cooked everything, I think, okay, I'll try with ordinary onions. And in the same book there is a recipe for tex-mex with sweet pepper, but either a typo, or something else, it is so confused that it cannot be baked (well, at least due to the fact that 5 grams of water and 290 grams of yeast are indicated) ... Well, I think, now I will interfere with everything. Just in the house there was a set of "traffic light" peppers. But it was not there! While I was meditating on the recipe, what to add and what was lying in my refrigerator, our impudent animal decided that salmon was just too much for us. In general, despite the salt, the cat liked the fish! (What doesn't he like?) Of course I was upset, but what to do? And I have already fried the onion ... And on the eve we bought up in Ashan and bought two smoked fish (horse mackerel). One was eaten, but the other came up for bread. (Obviously, not equal to salmon, but still ...) In general, such a yummy came out of my experiment! They ate and praised and asked for more. Here, today I dropped into Auchan and bought horse mackerel again. I want to share the resulting recipe.
Our favorite bran bread was taken as a basis. (GruSha, special thanks again!)
... barely waited for cooling, I had to cut it while still warm. Half is gone ...

The taste is there, but not pronounced. My husband said that the impression was that Soviet canned fish were molecularly implanted into the dough. It seems that the taste is caught and at the same time there is no feeling of "fishiness" in the bread.

A very tempting recipe. What do you think - if you put canned tuna as fish? Salmon and smoked fish are so expensive in our country that it will be bread for some kind of super celebration.

I think that tuna will do, too, squeeze out the oil and watch the bun. Actually, salmon does not suit me either because of its high cost. And our canned tuna is expensive, you need 2 cans per serving ... Expensive ...But if you are satisfied with it, then try it for your health! The main thing is, do not be afraid of experiments and everything will work out !!! Good luck!
