Beauties girls, tell me how to make a filling for a roll from fresh cherries so that it does not flow out and does not paint the biscuit blue. And also from raspberries. I cooked according to the recipe for a lemon curd, replaced the lemon juice with mashed raspberries, but the eggs gave an unappetizing grayish color, although the taste turned out very much. I don't know how for a biscuit, but my mother, when baking pies with cherries, always puts half a spoonful of starch in the filling, the cherries do not spread, I do the same ...

sweeta, thanks, but I tried to boil cherries with starch. For chocolate dough it turns out great, but for white dough I don't like the bluish color of the biscuit with such a filling. As a result, I made a soufflé from cherries with juice and gelatin with cream. She poured the half-frozen one onto a biscuit, rolled it into a roll on polyethylene film. So I put it in the refrigerator. Tomorrow I'll see what happened

I don't boil it, so I put cherries in the filling, then sugar, then sprinkle with starch (without fanaticism), but the color is blue ... I think cream + gelatin + cherry is the best option to get rid of it

So the pies are then baked, and the roll is already ready. If not heated, the starch will not thicken anything. My mom even dusts the dough with starch under the meat filling so that it does not get wet and is crispy. Thank you for reminding me about the cherry pies, we are in season.

Clearly, I didn't realize right away, so the roll turned out delicious ???

Very tasty! Only got a little wet from the uncured soufflé (I regretted the gelatin). What did not fit into the roll, I put it in the refrigerator in the molds. It turned out to be a very worthy dessert, the cream rose to the top like an air cloud, and below - a semi-liquid soufflé with a rich cherry flavor.

I can imagine how delicious it is ... yum-yum ...

Hello girls! I want to share my filling for the roll. Very tasty filling of protein cream + jam (any, better sour! It is very tasty to add red currant jelly). If you add fresh cherries to the protein cream, it will also turn out very beautiful and spicy. The cream will have a pleasant pink color, and the roll itself is very well soaked, becomes tasty and juicy!

Girls, I don’t know what about the cream, but about the white biscuit roll, in which the berries are added, so that there is no blue color, you need to freeze them (the berries) and only then add to the dough. Verified personally.
Reflections: maybe the berries need to be boiled (simmered) in a thick syrup, and only then added to the cream?

It is also an option! Thank you! And I already put such a mixture (protein + cherry) into the ice cream maker, they promised that it would be as before for 7 kopecks

Is it to add frozen berries to the dough itself, and then bake? Then it turns out not a roll with a filling, but something like a cake. Here, sweeta's advice about starch is probably fine.
