True, I tried to make it from homemade milk (I skimmed the cream, but they apparently got low-fat). but my experiments are not over yet ... we will try again ...

The second time I bought the same cream, from the same granny, put it chilled to whip and began to observe the process, after half an hour I found that the butter was whipped into a lump and a little white liquid exfoliated, I stopped the process, drained the buttermilk, as written in the recipe , and collected the butter with a soft plastic spatula in a tray and put it in the refrigerator. And how fragrant it turned out, not at all the same as in the store! This is how I always do now.

Perhaps the recipe is for liquid shop cream. But with home it turns out like this. Therefore, watch the whipping process and, most importantly, do not overdo it, otherwise the butter will melt and mix again with the buttermilk.

By the way, about 50ml of buttermilk is drained, the rest is all butter
