I made the following conclusion for myself - it all depends on the shape of the kolobok. I take any recipe from the site, I put all the ingredients according to the recipe strictly. But the last stock of flour (or rather the penultimate, because the last I always have yeast), I sprinkle it about a quarter less than in the recipe. For example, according to the recipe, 4 cups of flour. I boldly pour 3, and press to start. The kneading has begun, and I see how the bun is being formed. I gradually add flour, 1 tablespoon at a time, until the bun takes the desired shape. Now I always succeed in everything perfectly, the bread bakes well and rises.
As for the fast mode, baking will not work on it, it takes a lot of time to rise. For the fast mode, you need to put more yeast, you will read this in the recipes in the oven.
the muffin rises very well, if you put all the ingredients, then turn on the "dough" mode, and then, when the mode works, turn on the "French bread" mode. For a long time, but the result will be good, since the more baking in the dough (eggs and butter), the dough needs a lot of time to rise.
