Pickled lemons (Israeli recipe)

Ingredients

5-6 beautiful yellow lemons 550-650 g
Coarse salt 3 tbsp. l.
Sweet paprika 1/2 tbsp. l.
Dry hot pepper
(not necessary)
1 PC.
A little oil
(olive or vegetable)

Cooking method

  • Cut the lemons into slices about 0.5 cm thick.
  • Mix salt, pepper and sugar in a deep bowl. Dip lemon slices into the mixture on both sides (you don't need to catch the mixture much) and place tightly in a sterilized jar (sterilize with boiled water or in the microwave for a few minutes). Throw in pepper if used.
  • The lemons that have escaped should cover the lemons completely. If you don't have enough juice, you can add fresh lemon juice to the jar.
  • When the lemons are completely covered with juice, add oil to the jar, the oil layer is needed so that there is no contact between the lemons and the air. Close the lid and leave it out of the refrigerator for a week (but not in direct sunlight). Store pickled lemons in the refrigerator (they should be infused there for at least two months).
