Kalakukko - fish in dough
Category: Fish dishes
Ingredients
Rye flour 0.5 kg
Water 250 g
Fresh yeast 30 g
Cumin 1 tbsp. l.
Filling:
Baltic herring fillet 500 g
Salted lard
cut into thin strips 100 g
Cooking method

Knead the dough and let it come up and roll out to about 1 cm thick
place the filling on it in layers, then make it like a loaf, pinch the edges, coat with cream and bake
1 hour on low heat in a preheated oven.
I was then surprised by the combination of bacon with fish, but it tastes amazing, we often do at home, but for lack of fresh fish we take frozen fillets

Note
Peace be with you bakers!
10 years ago I was on business trips and in Estonia we filmed
an apartment with a hostess who every day prepared for us different
local dishes one thing I really liked, I wrote it down.

Kalekukko are traditional fish pies in Finland.

No wonder. For example, whenever I make fish dumplings, I always add lard to the minced fish, from pink salmon, the filling is juicier than without it. I know this is a very common recipe.
