Rosehip jam

Ingredients

Rosehip 1 kg
Sugar 1 kg
Sugar 3 tbsp.
Lemon juice (one lemon)
or citric acid (1 tsp)

Cooking method

  • Wash the rose hips and remove the seeds. Blanch for 2 minutes. With the remaining water from blanching, boil the sugar syrup. Dip the berries into it and cook until tender in one go. Add lemon juice or citric acid 5-10 minutes before the end of cooking.

Yesterday I made jam according to this recipe. I never thought that rose hips would make such a delicious jam. I understand that rose hips are not the most common berry for making jam, but it's worth trying at least once. I cooked from 500 gr. rose hips, 500 gr. sugar, 300 ml. water and 6 gr. citric acid. Cooked in one go, for 50 minutes (until the berries became transparent, and a drop of syrup did not spread on the saucer) over the slowest heat. I noted for myself that if I once again cook jam (and probably will) of citric acid, I will put a little more, and everything seems to be normal. I will be glad if this recipe is useful to someone.

So the question is: how do you manage to get rid of spiky hairs? This is the most difficult stage for me - I change 2-3 sieves and several times. But the result! I don’t put acid. Due to the large amount of vitamin C, it does not deteriorate in mayonnaise cans. I do a lot for 2-3 years at a time.

Rem, spiky hairs, I just remove with a tiny (smaller than a dessert) spoon. Perhaps due to the fact that the rosehip was in the juice itself (that is, ripe), this process did not cause any difficulties for me, the hairs were remarkably removed along with the seeds.
