Creamy pumpkin and smoked fish soup

Cream soup with pumpkin and smoked fish

Ingredients

Hot smoked fish (I have pink salmon) 500gr.
Pumpkin 500gr.
Medium potatoes 3 pcs.
Carrot 1 PC.
Bulb 1 PC.
Fresh tomatoes 3 pcs.
Low fat cream 200 ml.
Salt
Pepper

Cooking method

  • I had his recipe in the "Gourmet Dishes" book. I was idly leafing through it on my sofa in the kitchen and came across this recipe. First I rode past, as I always go around cream soups. But then my eyes fell on the list of ingredients. Pumpkin!! I just bought a huge, fragrant and orange pumpkin in some village in the Kaluga region a couple of weeks ago. It lay with me for the time being as a decor for my orange kitchen, but the hour struck, I decided ... The soup seemed simple to me, the ingredients are no quirks, the combination of products is successful, it should be good. I redid something (as always, who would doubt it) and - ta-ra-ram! The masterpiece is ready!
  • But really good! The husband approved it very much.
  • I poured about a liter of water, boiled, salted, cut the vegetables into cubes (except for potatoes) and boiled for 12-15 minutes. If you have fresh tomatoes, peel them off (to do this, make a cross-shaped incision and pour over boiling water), cut into cubes and cook with all the vegetables. If you have tomatoes in their own juice, do not boil them.
  • Butcher the fish (remove the skin, remove the bones, divide into two along the ridge). Cut one half very finely, the other into large portions.
  • Then remove the vegetables (strain the broth through a colander), put the potatoes in cubes in the broth and cook until tender (cook very quickly, about 5 minutes). Grind vegetables at this time with a blender in puree. If you have tomatoes in their own juice, add them now. Return this mass to the potatoes, put the finely chopped fish, pour in the cream (I think 10% will do, but I only had 20%) and bring to a boil, but do not boil!
  • Everything can be poured into plates. In the center, put a portioned piece of fish, chopped dill and sprinkle with ground black pepper ...
  • All the rubbish with a separate cooking of potato cubes was invented by me, since the Russian eater is used to catching and chewing at least something in the soup. It's not interesting to chew boiled pumpkin, carrots or onions. Means boom to chew potatoes.
  • Song, not soup! Good for autumn-winter, as thick, hearty and aromatic ...

I read the title of the topic and thought: an exquisite recipe!
And for sure, Chuchelka, thanks!

My suggestion is, instead of potatoes, cut a little raw bell pepper into small thin strips into the finished soup. Sprinkle with chopped herbs on top.

Pumpkin puree soup can be cooked in a variety of ways, without tomatoes, without potatoes, but with peppers, carrots. They still put the apple there. Chestnut puree. Sprinkle with almond leaves. Instead of fish - shrimp, mussels. And the very squeak of French cuisine is to put a piece of quickly fried foie gras into the finished pumpkin soup.
Scarecrow
I can't cut bell peppers into soup. My husband hates his spirit. Will kick out of the house with such a soup to Edren Fenet ...
Alexandra
Then carrots
And the most elegant solution is raw pumpkin itself with a thin straw

I make an exquisite salad with her:
- green leaves of spinach or arugula,
- halves of mandarin slices peeled from white film,
- raw pumpkin strips and sprinkle with pine nuts.
- either shrimp or grilled duck breast in thin strips.
Season with pumpkin seed oil and balsamic vinegar

Scarecrow A very interesting soup, I have not tried such a combination of pumpkin - smoked fish

Alexandra And as for raw pumpkin, this is rightly noticed - it is very tasty, I don't understand why it is so rarely mentioned in recipes in this form. Can it be absorbed poorly?
Alexandra
Cubic,

Just raw, it is perfectly digested and very useful, there is no less caroin than in carrots (but you have to eat it with butter).
But in the cooked form (boiled, fried, stewed, baked - any), it has an increased glycemic index and, like carrots with beets, for example, are excluded from the diet of those who reduce weight and diabetics. But this is already the topic of the heading about the secrets and recipes of healthy eating, if you wish, we can continue the conversation there.

Raw zucchini and raw finely grated cauliflower are also great ingredients in delicious dietary salads ...

I have not tried such a combination of pumpkin - smoked fish

By the way, there is nothing exotic in it (in taste), so do not be afraid to try it. It turns out a very tasty and creamy fish soup. Pumpkin with seafood goes very well. I have met such a combination many times in recipes, I prepared and tried two recipes. All OK.

The pumpkin is generally undeservedly almost forgotten by us. I started it all with a salad with squid and pumpkin. Mom brought me from the market a piece of a beautiful and fragrant pumpkin, with which I did not know what to do and where to attach. Having sat on the Internet, I fished out a bunch of recipes from there, but first I decided to take the simplest and with minimal processing of the product. To understand and appreciate its taste. Then it will be clear how to be with him in the future. It turned out to be the above salad. Boiled squids, steamed pumpkin (cut into strips, drenched in boiling water and infused in this form for 30 minutes), apples, fresh cucumbers. It was a revelation. The taste was wonderful, fresh and unbroken. And off we go. Wherever I just didn’t attach it, including all the well-known cereals (even in the instructions for the multicooker there is!), Pies, side dishes for meat.

If you add “sliced straws” to this soup, then it’s better, probably, steamed pumpkin so that it does not crunch too much ... And the salad, Alexandra, I ripped off and wrote off your salad ...
Alexandra
Why steamed? It is very wonderful to crunch in a puree soup instead of the croutons that are served with such a soup. Now, for dietary purposes, I am fond of chickpeas, so in pumpkin soup you can puree dark boiled grains, and soaked for 12 hours with soda (1 tsp for 1 liter of water) and then baked without water in 1 layer in the oven - instead of those croutons in the head soup

A whole pumpkin is an excellent "casserole for porridge with rice, the pulp of this pumpkin and dried fruit, in the oven (top = lid) or the same pumpkin soup."
We cook soup on the stove, at this time we bake the pumpkin itself with the leftover pulp - the future saucepan - in the oven. Pour the ready-made soup with cream and all the ingredients except raw herbs and slices into it, and instead of bringing to a boil on the stove, put it in the oven. We seal the hole on top with a layer of puff ready-made or our own unleavened or yeast dough and bake. We open the "lid" right on the table in front of an astonished audience, and pour it into plates, sprinkling with herbs and adding a crunchy ingredient.
You can also simmer lamb with vegetables and / or rice in such a saucepan

Creamy pumpkin and smoked fish soup.

I finally decided to implement this recipe. This is not just a song, this is a fairy tale, not a soup !!! Scarecrow, thanks for the recipe !!!

Did you like it?! I'm so damn glad!

Have you rubbed everything in mashed potatoes or left the potatoes in cubes like me?
By the way, I even warmed up this soup. I thought - the garbage will be (the cream will curl up) ... But no, it warms up normally like that, but it's better not to store it. Fresh meat is the tastiest ...
Cubic
I also decided to add potatoes in cubes, I do not like the taste of grated potatoes in soup ... But I did this: I boiled the potatoes in the microwave, and added the boiled ones. She served cream with the soup (not counting those already in the soup), each poured it into a plate to taste.
There was a lot of soup, so, of course, I also warmed it up on the second day, nothing is normal!
Cubic
Since this soup in my family has become VERY in demand (Scarecrow, thanks again !!!), I decided to adapt this recipe for a pressure cooker, well, I simplified it a bit. Here's a budget option:

Option for CB:

300 g pumpkin (leftover)
1 carrot
1 onion
2 potatoes
3 small tomatoes in s / juice
1 can salmon (canned)

200ml cream 10%

Peel the vegetables, cut the pumpkin into cubes, carrot into slices, onion into half rings. Enable mode "soup", fry the pumpkin, carrots and onions in CB in butter, while the vegetables are fried, cut the potatoes, toss them with the rest of the vegetables, pour all 0.5 L of water and continue cooking on the mode"soup"under a closed lid.

When the pan squeaks, gently transfer the vegetables to a blender, add the tomatoes and juice from them (about 100 ml) there, and grind them in puree. Open the canned food, cut the fish into small pieces.

Return our soup to the saucepan, put the fish there, add another 0.5 liter of water, bring to a boil (onricef "), pour in 200 ml of cream (if necessary, dilute to the desired consistency with water or milk), turn off. Salt at the very end, since the fish can be of different salinity.

This option turned out to be very tasty too, albeit with canned food .. maybe no one would have noticed the substitution, if I had not said
Scarecrow
Autumn has come, start cooking a thick and scented pumpkin cream soup with fish. Yes with dill, yes with pepper and homemade rye bread ...
I couldn't resist taking a picture of a crying pumpkin ... It's such a beauty. It lies in my kitchen, against the background of the autumn forest, which can be seen through the huge lancet windows and you can squeak from this picture ... The forest in the twilight was not captured, but the orange beauty was immortalized ...

Cream soup with pumpkin and smoked fish

I also periodically use the budget option (salmon in its own juice instead of hot smoked fish). It turns out just as great. Today, however, I had to ditch two cans of not-so-budget tuna, because my husband whined for a long time that he wanted this soup, then with a thick hint he bought pink salmon ... I thought it was hot smoked. When everything was ready for adding fish, I take cold smoked pink salmon out of the refrigerator, I look at it in a stupor, while I know that I don't have salmon in cans either. I remembered that there is tuna in its own juice. Hurrah! The soup is saved! He was sentenced ...
Cubic
Probably just as tasty ... and as beautiful as

Have you tried it with shrimp? very much too.

Yes? Have not tried. My husband loves shrimp, so let's lay out at what point, in what form and how many shrimps to pour into the soup. I'm already recording ...Cream soup with pumpkin and smoked fish
Cubic
I read somewhere a recipe about a soup with tiger prawns (they need to be peeled), they add at the very end, I don't remember the recipe myself, he gave me the idea of pumpkin soup.
I did with the usual, the most dreary thing is to clean a large bowl (the size of a normal soup bowl) of shrimp, it turns out to fill it by cleaning almost a kilo ... though I ate the not frail part at the same time. Maybe you should have boiled them with the skin? I do not know...

In short, cook everything according to the recipe, add shrimp at the very end, before the cream. Yes, I didn’t add potatoes to the shrimp version. There are no photos, I cooked it only once precisely because it took a long time to clean. (BUT VERY GENTLE TASTE COMES OUT !!!)

while I was writing, I thought: you can probably buy peeled ones ... they are not so tasty, but the soup itself is fragrant, I think it will be good
Scarecrow
Not, in my opinion, some kind of cleaned byaka. I tried to buy them three times and all three times did not know what to do with it. They have a taste of some kind. Better to clean those with shells.True, they run the risk of not living up to the soup. I won't eat them, I am indifferent to them, but my husband will gobble up only behind his ears will crack ...

Tiger is a pity in the soup, although there is much less trouble with them (they are big), but expensive they hurt. We'll have to suffer with such, buy more caliber and go ahead. Thanks for the tip!

No, I tried to buy peeled ice cream for different dishes, not quite, just tasteless! Therefore, I gather my will into a fist and clean, clean, clean ... There are also peeled, preserved in brine, well, a little better than peeled frozen.

I mean those, in brine ... they really are also rubber

ScarecrowThank you very much for the recipe.
I told my friend, and then she once brought me a pumpkin. Orange-orange. And I answered her with your recipe.

For the first time I did it without tomatoes (well, there are none), and instead of fish I added processed cheese (for soup).

The second time, too, without tomatoes, but added canned food.

We all liked it. Although they were well fed, they still ate with pleasure.

This is for you!
Scarecrow
I hope they weren't told in advance what the soup is made of? My mother looked at him suspiciously for a long time when she found out. But, having tried it, I strongly approved ...

Nice to know what someone else liked!
Caramel
In addition to porridge, I have never tasted anything from pumpkin. I don’t even understand how I could have decided on an adventure with pumpkin soup ... ..... And as a result, after the first preparation .... I made it all winter and spring, and this year I am going to freeze pumpkin for this soup. Very interesting taste! Just a discovery for me !!! (I really add potatoes in cubes)
Scarecrow
Yes, many are suspicious of the pumpkin and in vain. This is a wonderful vegetable and in the soup it is great, not exotic at all.
Kalmykova
Hurrah ! The pumpkins are ripe! We will have our favorite soup!
Nataly_rz
For a very long time, this recipe has been gathering dust in my bookmarks ... and all because I have bike there was no smoked pink salmon, well, I did not meet it in stores. Well, then my favorite site came to the rescue, since they do not sell smoked, it means Cream soup with pumpkin and smoked fish HERE !!!
Scarecrow
And handsome, my mothers. The color is fantastic. It would be more decorated with herbs and ground pepper ... Or then decorate in plates?
Nataly_rz
Well, yes, there are problems with decoration, we will work
But despite this, today the whole evening when I go to the kitchen I look into the pan, I admire

I cazza that I need two small cans or one larger. They are also different. I always put two cans into fish soup. I like the rich and fishy spirit to be thick.

The initial data is the remains of a pumpkin. The goal is to cook something so that it is tasty, quick, easy, and you no longer want everything that was cooked from pumpkin before. How I did it. I revised the recipes on the forum, and then just the remnants of capelin in my own juice (I made homemade sprats). Pumpkin, potatoes and water - multicooker soup program. Two salvaged onions - to the same place. I poured it into another pan, scrolled it with a blender, there the remnants of capelin in pieces, a lot of greens, salt, pepper, lavrushka. I liked it very much!
Manna
Wow! What a miracle I missed! Scarecrow, thank you very much for the recipe!
Kalmykova
And instead of fish, I do it with any seafood. The people are precipitating!

I also want to try supec. Only I steamed the whole pumpkin, grinded it and froze it. How can you contrive and cook soup now?

Emerald
Girls, and if you exclude the cream (post now), will it work?
Scarecrow
Emerald,

It will work out. There will be no creamy note, which seems to drown out the vegetable one (remember coffee with cream - cream has the same role and effect here), and the taste will not change dramatically.
Emerald
I will attach a pumpkin today
