Whole grain bread with muesli and seeds

Ingredients

Whole grain flour 250 g
Wheat flour, premium 250 g
Wheat bran 3 tbsp. l.
Water + freshly squeezed orange juice 350 ml
(250 water
and 100 juice)
Salt 1 tsp
Honey 1 tbsp. l.
Pressed yeast
or dry
10 g
1.5 tsp.
Quinoa
(can be substituted with sesame seeds)
3 tbsp. l.
Flax seed 3 tbsp. l.
Muesli
took organic without sugar with dried fruits, nuts,
sunflower and pumpkin seed

Cooking method

  • Fry the bran and quinoa in a dry frying pan, turn off and let cool slightly.
  • Squeeze the juice of 1 orange, measure in ml. Calculate the required amount of water so that the total liquid is 350 ml.
  • Dissolve the pressed yeast in warm water with honey and let stand for 10 minutes. if the yeast is dry, add it without diluting.
  • Pour into a bucket, add juice, sift flour.
  • Add quinoa bran, flaxseed, salt.

  • Further:
  • - if the baked goods are in the bread maker - the whole grain mode with heating, add muesli at the signal. Grease and sprinkle with muesli, quinoa, and flaxseed before baking.
  • - if the baked goods are in the oven:
  • Knead the dough in a bread maker, 1 knead in whole grain mode with heating. Remove the paddle and leave in the oven for 30 minutes.
  • Place on a richly sprinkled muesli and quinoa board, stretch into a layer to fit the board, sprinkle with the rest of the muesli on top.
  • Fold four times from the corners to the center, then once again the new resulting corners four times to the center, turn over and form a round or long loaf.
  • Let sit in the form on baking paper in a warm oven for 30 minutes, then in the room for 15 minutes.
  • Use the last 15 minutes to heat the mold with a lid in the oven to 240 degrees.

  • Transfer the loaf along with the paper to the form.
  • Bake for 30 minutes with the lid closed at 240 and another 15 minutes with the lid open at 225.

Orange juice is an idea from American sources. It is believed that a small amount of juice helps to reveal the unusually pleasant distinctive taste and smell of whole grain flour. The orange flavor itself is gone.
And quinoa has a neutral taste and slightly resembles sesame seeds.

The taste is wonderful. A spoonful of honey also gives not sweetness, but a slight piquancy and goes well with muesli. Muesli, flaxseed and quinoa did not dissolve, but remained slightly crispy. It turned out a very interesting combination

Wild bread:

For 1 loaf (about 750gr):
3st. l. boiled wild rice
300 ml of rice water
40g. melted and cooled drain.butter (a piece disappeared, readily replaced by vegetable)
200 g + 70 g (had to be added) millet. flour, premium
220g wholemeal flour
2st. l. with a heap of corn flour
2st. l. with a slide of hercules
2st. l. with a slide of millet. bran
2 tbsp honey
1.5 tsp salt
10gr. pressed yeast

whole grain mode ...

the bread turned out so aromatic ... with rice grains ...
in the evening my husband will come, if I don't forget, I'll post a photo :))
