Stеrn, this is a great recipe !!!!!
I already wrote today that we are big fans of cottage cheese, everything and everyone. But my everything is sweet, and I (like an orphan) love cottage cheese with herbs, spices.
Happiness came to me yesterday - 4 kg of excellent cottage cheese, homemade. And the whole family will be happy: me - cheesecakes, children - cupcakes (and our dad loves tea, more, with something - sweet, salty, pepper).
There is a tiny question: if you add garlic to cottage cheese - how will he make friends with spinach?

Great pastry dough!

And the dough is just super-duper, tasty and very obedient
Stern
raya1 if available, add dry garlic better.

And the dough is sooooo tasty!
The husband, when he tasted the cheesecakes, asked, licking his lips: "Where did you get such a delicious dough?" To which he received the answer: "In the bread maker!"
Lika
The dough is delicious. Made with sweet curd mass with raisins, although NON-sweet filling is clearly better suited here.

And yet, the dough is "fast". Therefore, cook cheesecakes while simultaneously catching small badites around the apartmentUnsweetened cheesecakes with cottage cheese and spinach, in order to collect for art classes - it is impossible !!! I kept the dough a little on the rise and proofing, it turned out well, but not as fluffy as the ears

My bunny, thank you soooot! Today I baked these cheesecakes, only the filling was egg with green onions and mayonnaise (I chopped everything in a blender to a state of puree). Mine liked the wrong word! Tonight they brought me fresh spinach, tomorrow I will bake it according to all the rules, with cottage cheese and spinach. Stelochka, and if you put more spinach, eh? Or not, 100 gr. will be sufficient? Can you put sorrel into these cheesecakes?
P.S.Stelochka, when proving the cheesecakes grew to incredible height, and when baking they blurred, did I overexpose them in the proofing or what?
Stern
Tiny, honey, good health to your eaters! Unsweetened cheesecakes with cottage cheese and spinach

Baby, you first weigh 100 grams of spinach - it's a whole bag fresh! Although you can add why not.

But I would not stick the sorrel. Spinach has a neutral taste, and sorrel is sour, no matter what happens ...

Little one, the thought that I got excited about the yeast never leaves me.
Put less, I think it will be better and the dough will not creep.

Yeah, thanks, I understood everything, I'll try today with less yeast. Another such moment ...and if you don't melt butter in the dough, but add it in a softened form, will it change anything?
Use your hands to crush each ball into a circle of Ø 10 cm. Put the filling in the middle and form the cheesecakes.
Stelochka, or maybe they blurred with me due to improper molding? I spread the ball into a cake, and then pressed the middle of the cake with the bottom of the glass, and only then put the filling ... Maybe you need something else?
Stern
Tiny,

butter need not be melted, nothing will change, it will intervene even in a softened form.

Form yourself calmly as you like, no difference.

The dough is horrible how I liked it at work, pancake squeaks! Thank you dear, the dough is super !!!
agata116
Made pies from dough according to your recipe, it turned out well. The dough is pretty nice, but I had to add another 80g of flour. so, as from your amount of flour, the dough was rather thin, not pie-like, I added it and everything worked out, only I am not very good at sculpting. I have pies with cherries and pacifiers with cinnamon. Thanks for the recipe.

Here is my report on Cheesecakes with Cottage Cheese and Spinach. I decided to pamper myself while my husband was away. And then everything to him only with meat or sweet
Thank you Stella. Where are we without you!
I liked the dough VERY!
I will continue to bake different pies from it. I only added a little flour, otherwise it was watery! And on account of the fact that the true truth "squeaks"! And fast! Super!
The taste is soft! What are you clever, Stella! Tired today, I got up to work at 5 am. But all the same in the evening I wanted to cook something according to your recipes. See how you inspire us! Now I have already lost 3, and I will not stop there!

Unsweetened cheesecakes with cottage cheese and spinach

Stella, dear you are our inspirer! I have a question. My husband brought me from Germany several cans of canned cherries. I want to make cherry pies. Already done with Awesome test. Liked it. But when I made these cheesecakes, I just fell in love with the dough! Will this dough work for my patties? And how much sugar should you put in this case? I don't want to make a dough too sweet, since I will put sugar in the filling. And another question. What is better to put with a cherry so that the liquid does not wet the dough? Semolina or starch?
Thanks again for such a wonderful dough!
Stern
Milochkaof course, the dough is also suitable for sweet products!

Sugar, I would put 1 tablespoon + a bag of vanilla sugar.

Put the cherries in a drushlag, let them drain well, and then dry them on paper towels. I usually add starch to cherries.
Mila007
Thank you very much, Stella. Let's do it. Then I will report!
And yet, I forgot to say that I put a little less yeast, by 3 grams. It came up perfectly! And it's so fast. Very helpful when time is short!
Mila007
Stellochka, and I'll come to you with a report on the pies! From this wonderful test of yours! The best! The fastest! The most obedient! Thank you million!

Sternushka, put the dough on the cheesecakes, unsealed the recipe, when there was 400 grams of flour, now I saw that 450. 50 grams can be added when molding the cheesecakes? The dough seemed thin, but no one added flour for the recall.
Stern
Daisy, be guided by the consistency of the dough. If the dough is thin and inconvenient to work with, add a little flour. It is also possible when molding.
Mila007
I wrote that I added flour, it took me about 460-470 grams. And the dough was super! And I used live yeast 3 grams less.
Daisy
I have already measured 50g. I will look at the consistency. Got homemade cottage cheese, today is Stern's cottage cheese baking day.

Thanks for the recipe! Yesterday I made half of the products, replacing white flour with whole grain. It turned out 4 cheesecakes and 8 small pies. The dough is really very nice. I baked in a Mulinex bread maker. I added garlic powder to the filling. I thought that only I would eat this, but my husband also really liked it. Today I will make white sweets with poppy seeds and apples for children. I will make a full portion of the dough, I will freeze half.

I also bring you many thanks for the wonderful recipe. I love baked pastries, but I didn't know how to cook dough. Now with the purchase of a bread machine and this wonderful site, we can do everything. Made with rice + egg + dill, sprinkled with black sesame seeds. The result is the most delicate cheesecakes. Thanks and thanks again.
