Pizza Margarita on unconventional dough (+ video)

Ingredients

Dough
Flour 300g
Sour milk (or other sour milk) 250ml
Olive oil 2 tbsp. l.
Sugar 1 tsp
Salt 1 tsp
Dry yeast 1 tsp
Filling
A tomato 2 pcs
Mozzarella 120g
Parmesan 2 tbsp. l.
Basil (fresh) 1 bundle
Sauce
A tomato 2 pcs
Sugar 1 tsp
Salt 0.5h l.
Basil (dried) pinch
Oregano pinch
Garlic 1-2 teeth.

Cooking method

Add sugar, salt, yeast, vegetable oil to curdled milk or other fermented milk product. Add flour and knead the dough. Cover with foil and let rise for 1.5-2 hours.
Meanwhile, cook the sauce. Grate tomatoes on a torn grater, add sugar, salt, oregano, basil and squeeze a couple of garlic cloves through a press. I added a garlic arrow paste. Boil on low heat, stirring occasionally, until the juice is almost completely boiled away and thickened. It took me 25-30 minutes.
Knead the matched dough. Divide into two parts with oily hands. This amount of dough is enough for two 30cm diameter pizzas. Grease baking paper with butter and flatten the dough into a thin cake with oily hands. The dough is soft and docile, it is easy to work with it with your hands.
Spread 2-3 tablespoons of sauce over the surface of the dough. Arrange thinly sliced ​​tomatoes. Sprinkle with chopped basil. Top with the mozzarella cut into washers. Powder with grated Parmesan and drizzle with olive oil.
Bake in an oven preheated to 190 degrees for 20-25 minutes. When serving, spread whole basil leaves on top (which I forgot to do).

Note

The site already contains several recipes for this popular pizza. In this recipe, I kneaded the dough in sour milk in a safe way, and in the authentic version it is made in water, because pizza is the food of the poor. But despite the deviations from the rules, the pizza turns out to be very tasty.
