Note

Mushrooms, including chanterelles, have their own special aroma and can themselves be a seasoning for various dishes. Therefore, when cooking mushrooms, you cannot overdo it with seasonings, any seasoning should set off the taste of the product, but not drown it out, and even less dominate the natural aroma of mushrooms.
Chanterelles generally require a minimum of seasonings. In general, black pepper, coriander, and cloves are suitable for these mushrooms. Green herbs-spices are combined well with chanterelles: parsley, dill, basil. Vegetables, carrots, onions, or green onion feathers shade the taste of mushrooms. When boiling chanterelles, you can add bay leaves. But this does not mean that all these seasonings must be put into fried chanterelles. Since the onion is already present in the pie, I add a little black pepper and dry dill and that's it.
I recommend the hostess to choose the seasonings herself, and be guided by the tastes of her family. If the family loves mushrooms as a product, then they need a minimum of seasonings.
